Electric Monday

Today was one of those days where I just charged through. I had focus. I have no idea what controls my drive, but I think it’s 25% hormones, 25% the weather (even though today was bad!?) and 50% the day of the week. Mondays seem to have more electric charge to them. I got so much done today!

And it was going swell until I just sliced my knuckle open with our chef’s knife while doing the dishes. It’s not serious, but it hurts to type!

We had leftover romaine from Saturday but no Caesar dressing, anchovies or parmesan in the house. What I whipped up, though, was pretty darn good!

ROUGHLY [because I didn’t measure]:

  • 3 tbsp Greek yogurt
  • 1 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp nutritional yeast
  • Pinch pepper

    the weather definitely has an effect on my productivity levels. either extreme (super sunny or super rainy) yields a major decrease — either want to be outside or curled up with a blanket!

    mmmm that lasagna looks just as delicious the second time around!

    I’m the most productive on monday nights, oddly enough. although this cold, rainy monday sort of put me in a mood. I also enjoyed some veggie lasagna tonight as well!

    Leftovers are the best! Our dinner consisted of a medley of frozen sauce reheated, some with ground turkey and some with turkey meatballs. I added more ground turkey and I think there will be enough for tomorrow’s night as well…love leftovers for leftovers! lol

    Sorry about your knuckle. I am the worst at doing that kind of stuff. I felt super charged today too. I got certified in CPR/AED and really, how could you have a bad day after that. Enjoy your book and sleep well!

      Anyone who hates leftovers probably has someone else doing the cooking. My grandfather hated going out to eat…because he had my grandma at home cooking for him…and cleaning it up. 🙂

    I love dinners that come together so quickly. Tonight mine is taking a good 30 minutes and while that isn’t THAT long, it’s too much for tonight. 😉

    Brilliant faux-caesar dressing – I never would have thought of that (nutritional yeast!) I wish I were in full swing on Mondays. It took me until my afternoon workout to get that good-productive glow going.

    I’m the only one in my house that actually likes leftovers. To me most food tastes even better the next day. Today was productive for me as well. I’m thinking its the weather.

    I envy your ability to pour a teeny glass of wine. I always think to myself (just have 3oz pour with dinner, that will be nice) but then I get out a glass and pour far more. I clearly need to build up restraint! Hope your finger gets better.

    Cereal in a mug = one of my favorite things. It’s so pleasant… like a cozy memory. Snuggle on the couch in sweats, a blanket, and a mug of your fave cereal. :-] Mmm, I could go for some now!

    I like the sound of your homemade dressing. Yogurt bases are so versatile and yield great finished products.

    The leftovers and dinner being ready in 10 mins..amen for (planned) leftovers! They save me.

    That must really hurt when you bend your fingers!

    Years ago, my fourth finger got cut bad on the skin under my nail when I broke a casserole dish while washing it in the sink. I did not know that I cut it until I noticed the blood. I had someone butterfly bandage it, and it healed quite nicely. Now I am very careful when holding any type of glass dishes and such in the sink!

    10 years working in restaurants, and the only time I’ve ever cut myself was when our dishwasher stuck my knife point-down in a wooden cutting board. Have a giant scar on my right hand from that – nothing since then.

    I love cereal in a mug and leftovers! I feel like I eat each of them daily in one way or another. Today’s lunch will be leftovers and based on tonight’s schedule including yoga at Strala that doesn’t end until 8:30, I feel like dinner will be cereal. 🙂

    I love days when I am on a roll and just plow through my to do list. Such a great feeling! Leftovers are the best. Sometimes I enjoy leftovers more than the original meal – especially when eating a pasta dish or soups.

    The weather has made it hard for me to do anything! I keep wanting to make veggie lasagna….but the thought of having a whole tray of leftovers actually turns me off from the idea. I might just have to whip up a mini one. Have a good rest of the week!

    My roommate sliced her knuckle doing dishes yesterday too! Except hers required a 4hr trip to the ER to get stitches… who knew doing dishes could be so deadly?!

    I really like that ranch greek dressing idea – I’ll have to find some nutritional yeast! Where do you buy yours? Seems as if there’s controversy about bulk bins vs non bulk bins for it

    Greek yogurt makes the best creamy dressings! I’m not a big mayo [or Miracle Whip] fan, but usually add a splash of vinegar to water it down and some spices to add a little zing 🙂 My momma uses it to make a homemade ranch dip for veggie platters!

    I’d say my productivity is determined by 50% hormones and 25% weather and 25% everyday distractions. The day of the week is pretty irrelevant.

    I noticed your unfavorable comment re. Goon Squad – I only got a few chapters in this summer before declaring it a dud. Sorry you have to suffer through it; hopefully there will be some redeeming qualities to it in the end? I recall the reviews were pretty good.

    Hi there! QQ for you Kath- do you prefer the nutritional yeast powder or flakes? I’m planning on venturing into nutritional yeast world and have heard people swear by both. Also – any suggestions on some other yummy uses for it?

      I have only tried the flakes – never seen the powder. But I like the flakes! I feel that they are more fun to eat on food!
