Egg Night

Did a little switch-a-roo for snacks. I ate a few wild cherries with my lunch that I had packed for snack and ate my pear for snack – along with this mini coconut LaraBar I’ve had forever from a race. Coconut and PB Cookie are def. my favorite LaraBar flavas!

After work I headed to YOGA! Emily and I met at 4:30, I changed into shorts and we were off on an hour walk. Our walks go by SO FAST on Thursdays!! Then we headed inside for an hour of indoor sweating. Yoga, per usual, was amazing. The whole "releasing your emotions through your strenuous sweating" is really so true. Not a myth! I actually showered at the studio (thanks Tanner for the new shower stalls!!) and boogied home for dinner.

I was famished upon arriving but had a craving for kale chips. Worth the 12 minute wait 🙂

I wasn’t sure what to have with them, but upon pulling into my driveway, I saw a familiar logo.

A few weeks was way too long without COCONUT BUTTER!!! And some Cacao Bliss on the side 😉 I have been craving it like mad. Had to replenish!

Also purchased some chia seeds!!! I was running low on those too.

Eatin’ time. Thursday Egg Night!! <— This has really helped my meal planning. Eggs are so versatile and it means one less night’s dinner to worry about.

So along with my kale chips, I fancied myself up a sweet potato.

Not cheese. Not yogurt. Not butter.

That’s a nice blob of coconut butter.

My sweet potato was nuked for 7 minutes until tender. Not as good as baked, but good in a hurry.

For some protein, I had an easy microwaved egg. I’d call this a twist between a hard boiled egg (which takes lots of water and time) and a sunny side up egg (which dirties a skillet). This was just an egg nuked for 70 seconds a power level 7. Perfect doneness!

‘Twas a delicious dinner!! I’m still feeling a little empty – I think because I waited so long to eat. Going to chug some water (could be thirst from yoga) and then eat some cantaloupe if I’m still hungry!

My original plan was to get up at 4:45 tomorrow and work out before work (since we have evening plans) but I’m a’thinkin’ that my body deserves a nice restful night’s sleep (first in weeks!? I hope!). So tomorrow is now a rest day.

    PB cookie is my favorite Larabar! I tried PB&J but it just tastes kind of funny. I still need to make kale chips, but I’m super scared of how they will taste. Good idea for a rest day, I took one yesterday and didn’t really do anything. Sometimes we need that, and it felt great 😉

    Yum, I love simple dinners like that! And I really MUST get some coconut butter. It’s so expensive but I’ve been eying it for a while now. Have you tried sweet potatoes with nut butter? It’s amazing!
    And I was wondering, what did you think of the Arnold’s Sandwich Thins?

    That is funny I just had a very similar meal tonight. I had a veggie burger with an egg on top for protein along with sauteed veggies and a microwaved sweet potato on the side. It was an easy dinner in a hurry. You are right about the micro. potato not being as good as roasted in the oven, but it works.

    You must try the PBJ larabar, that along with the pb and the coconut one are my favorites.

    Coconut and PB Cookie are my fav larabar flavors too! They taste so decadent. Also, the idea of putting a big blob of coconut butter on your sweet potato is inspired. My goodness, that sounds amazing. I’m going to have to whip up my own batch of coconut butter in my mini food processor, and that get to business with the sweet potato. Overall, your dinner looks delicious. Eggs are also my favorite go-to meal when I don’t know what to make.

    I can’t find the coconut larabars anywhere!
    I’ve never done hot yoga, but I always imagine it must be a little like after you’ve had a good cry? I could be totally wrong, of course, since I’ve never experienced it! Hopefully I will soon!

    Wow, after 2 hours of exercise on a Thurs night, I’m surprised you don’t always count Friday a day off. You’re making me feel incredibly guilty!

    At the same time, you’re also inspiring me to try Yoga. I totally want to!

    If you microwave the sweet tater you can throw it in the over for 10 min after to give it that baked taste…..it’s worth it 😉

    I’ve never tried a Larabar, crazy enough. They are just so expensive I can’t justify spending the money but maybe I’ll “splurge” on one this weekend. 😀

    Hey Kath, just wanted to ask you a question…I don’t get this thing about coconut butter. I mean, I am sure its delicious, but its SO bad for you, its not a health food like a lot of people claim – sooooo much saturated fat! What is your opinion on that?

      Well it may not be a super food, but it is certainly not “SO bad for you!”

      Just like all fats are not equal, all saturated fats are not equal too. The sat fat in coconut is mostly medium chain triglycerides: http://en.wikipedia.org/wiki/Medium-chain_triglycerides.

      These can bypass the lymphatic system and be used for energy. (Unlike, say, lard).

      And besides, I use coconut butter in tbsp portions – not by the cup full! (And the milk that you use by the cup is much more diluted).

        Katie, the way I look at it, and Kath probably agrees, is that real food that comes from a plant source can never be SO bad for you. Coconut=real food.

          Thanks for your opinion guys, that wikipedia article was interesting. I do have to disagree that all things marketed as “real food” are good for you though, it can just be marketing!

    That looks like a perfect lazy night dinner! I also love how yoga lets you sweat out the toxins in your body. A sweaty yoga lesson always leaves me hungry too! Just make sure you replenish with plenty and plenty of water 😉

    This meal looks perfect! Perfectly rounded out & pretty! I love the idea of microwaving the egg. One of the main deterrents to eating them for me is the dirty pan in the end!

    Oooh, that coconut butter melting on the sweet potato is such food porn 😛 Love it! Am going to try and work out my budget so that I can splurge on some coconut butter. It may not be Artisana that we have here in Australia, but I hope it will suffice!

    Yumyumyumyumyumyumyumyumyumyummmmmmmmmmmyyyyyy! Honestly. That’s like three of my favourite foods, in one meal – chips/kale (never had kale chips before! Shock horror!), sweet potatoes, and eggs. Yum.

    Kudos to you for allowing yourself the day off! A good part of being healthy is knowing when to rest. 😀

    A full night’s sleep sounds like a good plan – though I keep finding that every time I schedule that I wake up early anyway!
    For some reason microwaved eggs gross me out a bit (maybe it just reminds me too much of those patties that are called eggs at Dunkin Donuts and other places like that?) Anyway, I think I’ll stick to dirtying my skillet – but I do love eggs.

    You’re right – sweet potatoes are just not the same cooked in a microwave. I sometimes hate to waste the energy and space to make them in the oven (and we don’t have a toaster oven), but they always seem too dry, even with toppings. I haven’t tried eggs in the microwave, but I think I’ll continue to use it just to reheat rather than cook.

    I love the idea of egg night! Eggs are one of my favorite fast and easy weeknight dinners, but I have a hard time getting them just right in the microwave. One of my favorite things to do with them is fry them and serve them up on top of a big pile of roasted veggies with just a bit of balsamic vinegar. Particularly easy when I’ve got leftover roasted veggies on hand, and oh so delicious.

    And I’ve yet to find coconut butter in my local health food stores, but every time I see it on your blog I want it more!

    Woah. Kath, I read your blog every day, and when I checked it this morning I saw that you and I happened to eat the exact same meal last night. Totally bizarre!

    Kale, sweet potato, and egg. Although I didn’t have the delicious coconut butter. I just ate my potato plain, but it was still lovely. 🙂

    I get such strong cravings for kale!!

    Have you ever tried the Tropical Fruit Tart Lara Bars? I think those are even better than the coconut although with similar flavors. My favorite, though, is the Lemon Bar. Awesome!

    Its strange that I buy kale every week for my rabbit to eat, but I’ve never tried it… I really should sometime, but it just smells so nasty! I don’t know how it could ever taste good…

    Okay, I know this is a super old post, so I may get no reply at this point. But I just tried your egg-in-the-microwave trick for the first time and had a mini-disaster. I set it for 70 seconds on 70%, but about 3/4 of the way through cooking, the egg jumped out of its ramekin and landed on the microwave plate. Anyone have any thoughts why that would happen– and if I should lower the temperature or maybe the time? Thanks! 🙂
