Eats + Okra

If you didn’t notice, my lunch was kinda light. Two parts instead of my usual 3-4. I’m trying to just eat until I’m satisfied and not full.

Which sounds fun, but not even an hour and a half later I was feeling a little hungry again! I tried to hold out until 2 hours and then had my apple.

Juicy and cold – mmmm. I forget how much I really love eating apples out of hand.

Another hour later hunger was still hanging around! This is why I am not a grazer – I just can’t get satisfied on little portions. So I chose my next snack as my tried-and-true filler-upper

Yogurt + cereal. Perfecto!

Had this at 3:30 and wasn’t hungry again for 3+ hours. And I had an appetite for dinner!

Speaking of dinner, it rocked!

Leftover frozen veggie burgers from our Great Harvest cookout (see the recipe here: Tara’s Veggie Burgers). Matt didn’t get to bring home any buns, so we just ate them plain.

And the bun was replaced with some Trader Joe’s cornbread that we made back in April and froze. One of my most successful and useful frozen items ever! 60 seconds in the microwave and it’s perfectly hot again.

The highlight of dinner was most definitely the OKRA. I love okra, but I have never eaten it in whole form. My gosh, talk about delicious!!! I love the delicate shell of okra and the oozy inside with a slight crunch and a big mouthfeel.

We tossed it in a tsp of canola oil and rubbed on some creole seasoning (which makes everything better) and roasted it in the oven at 400* for about 20 minutes.

SO DELICIOUS!!!!!!!!!!!!! SO LOCAL! Can’t wait to get more at the market this weekend!

I worked hard all afternoon on my consultations. They are quite time consuming, but also fun because it’s my favorite topic and I know I’m helping others in the process. I worked straight until 5:00 and then broke for this:

The only way I could get him to join me was the promise of a shoulder massage!

I’m off to watch episode #2 on disc 3 of season 1. I feel like this weekend was earned with a few days of hard desk work.

Tomorrow Matt’s working and we’re helping our friends Michelle and Ben move into their new house – just 2 miles away! The rest of the afternoon is marriage time since I have been traveling so much I feel like we haven’t spent much time together!

    You and Meghann are making me want Okra and I don’t even think I like Okra! I’m going to have to give it another go!

    Also, have you tried the Creole seasoning on cabbage? I cut up cabbag and put it on a baking sheet. I spray it with a little I Can’\t Believe It’s Not Butter Spray and sprinkle with Creole. Bake it at 350 until tender and it’s so YUMMY!

    I’m not a grazer either, I’m all about big, filling meals! Although, I do graze sometimes and eat mindlessly other times lol. I don’t like not feeling “full” after a meal; I usually end up hungry an hour later when I am less-than-satisfied.

    I’ve never had okra, it’s on my “must try” list.

    I haven’t had a good experience with okra, but I’m guessing its due to the fact I’ve only tried the frozen variety…ha! I need to find some fresh okra and give it another go…thanks for sharing the recipe! 😀

    somehow local things just taste SO MUCH BETTER. maybe it’s all in my head, but i love it. yummy + fun looking supper!

    i feel like i am missing out on all this gossip girl! i’ll put it in my queue to watch after i catch up with mad men and lost. too much tv, too little time and not enough reading books =D

    Does baking the okra make it less slimy? I like pickled okra but fresh is just too gummy or slimy for me. I’ll try your recipe….

    I am a recent okra convert, but here’s my favorite prep:

    Toss in olive oil, salt and pepper. Grill on a hot grill until the sides are charred. Top with lemon juice.

    Honestly, I think it’s as good as eating french fries!

    Do you prefer canola oil over olive? I was in Spain just recently and loved how cheap and abundant olive oil is there! Tastes so good!!!
    By the way, I love the new pomegranate flavor of Chobani yogurt.

    I’ve never had whole okra… I don’t think it grows in Oregon, so I always get it frozen… but it looks so pretty the way you did it!

    I have yet to try okra, but it sounds delicious and like a fun new vegetable to add in to the mix. Hopefully someone around here is growing it…

    Also, do you pay for a gym membership? I’m having a hard time deciding if mine is worth it and you always seem to be staying active outside of the gym. Thanks!

    Okra is so good–I wish I could find it in Scotland!
    Gossip Girls is sooo trashy, but I have watched all of them and enjoy watching them! Usually Tim watches them with me, but with his laptop out so he can do other things as well. = )
