Eat Real Food

Not plastic! Yep, the ole plastic food came out in Community Nutr. today. We had fun playing around 🙂

My bean pizzas held me over really well today. I snacked on these dried mangos (half a bag) by Peeled when I got to class. These were hands down the best dried mangos I’ve ever had. Not too tough like it can get. And not sweetened either!

And hour later I dove into my packed dinner. I came home so hungry last night, I felt like eating during tonight’s class. So I made dinner at lunchtime and packed it up!

This was a delicious chilled salad with a base of millet. The ingredients all tossed together:

  • 1/3 cup cooked millet (or quinoa or couscous or pasta or wheatberries)
  • 1 can garbanzo beans, drained
  • ~1 cup veggies – 1 small zucchini, 3 mushrooms, 2 tomatoes
  • 3 tbsp gorgonzola
  • 3 tbsp walnut pieces
  • Dressing: 4 tbsp lemon juice (2 whole medium lemons) + 1 tbsp olive oil

Makes about 7 cups – perfect for packing in advance! Because I knew you’d ask, I estimated the calories per cup at about 150.

And perfect for scooping up with chips! Yum Popchips!

And because a 3 hour class is always more fun with chocolate, I packed this Bliss bar to share with my friends! I had 3 pieces and they had the other 3. This chocolate tasted GOOD!!!!!

Once home (2.5 hours later) I was hungry and the chocolate party continued – over cottage cheese! I never would have thought of this combo (er, I guess I did..but you know!) but it was totally awesome!!!

Cottage cheese (1/2 cup) with Navitas Naturals Cacao nibs, chia seeds, and a crumbled chocolate hazelnut bite. (Def. going to make a batch of those when they are gone!!)

Matt broke his bakery curfew and JUST got home from a night out with his friends and went to bed. He’s going to be sleepy tomorrow!

    That salad looks delicious and superconvenient. I’m definitely going to have to try that!

    If I could do lactose I would try the chocolate-cottage cheese combo too, but lactose and I don’t get along.

    Does the lemon juice cut the flava of the gorgonzola at all? Or do you need to be a gorgonzola lovah to enjoy that salad. Looks yummy (and would be also great with GOAT cheese, my lovah!).

    Oh I love Kelsey’s face looking at the plastic food lol. Those dried mangoes look really good! I hate when dried fruit tastes overly sweet. Cottage cheese for dessert is so good! I love mixing it with lots of cinnamon, raisins, and a dash of sugar. Enjoy your night!

    I love how you are able to feel comfortable taking meals and snacks to class with you! I honestly have never heard of doing that before… do a lot of students do that? Is that common in classes other than Nutrition/Food???

    LOVE that cottage cheese mix. I usually just eat mine with loads of black pepper sprinkled on, but this sounds delicious!

    That is by far my FAVORITE easy, tasty, healthy portable lunch – quinoa with lemon EVOO dressing, veggies, and chickpeas! I never get sick of it!

    Do ya’ll pack your food for class? I imagine it’d be interesting to see what a bunch of RD’s to be pack!!

    I made a great salad like that last night with cous cous, onion (sorry!), cherry tomatoes, garbanzo beans, and feta … and used your stuffed zucchini idea – it was wonderful!

    I find cottage cheese to go with TONS of things odd. It adds a nice salty contrast to something sweet. I believe a good staple to have around.

    I love cottage cheese mixed into smoothies–1 cup strawberries, 1/2 c. milk, 1/2 c. cottage cheese and a little stevia–it tastes just like cheesecake and is a super protein boost!

    My nutritionist pulled out the plastic food during one of our sessions and I admit that I regressed a little.

    I love the Peeled fruit, too, but I can only find it at airports, where it’s ridiculously pricey.

    3-hour classes can get to be pretty boring, but I’m glad you’re able to have a little fun and eat some REAL food! And the chocolate definitely made it so much better.

    Hey there!
    My favorite dessert at the moment is cottage cheese blended with a generous helping of cocoa powder and a packet of Truvia – it makes a chocolatey fudge party in your mouth that’s full of protein at the same time!

    I had a professor in college who forbade us from eating in his early morning class. Fine, totally understandable that it can be distracting (this was a small seminar), and his prerogative to make the rule. But he also banned drinks, including water and coffee. This was an 8:00 am class!

    And he would not allow anyone to leave to use the bathroom during class. He advised us that the class was an hour and a half, and we were all grown ups who could wait to eat, drink, and use the bathroom.

    Ugh.

    I love the combo of cottage cheese and chocolate – one of my current favorite snacks is 1% whipped cottage cheese with cocoa powder and fresh strawberries. Mmmm…

    I love making big filling salads and saving them to eat throughout the week. It’s brilliant for go-to lunches and/or dinners and I’m sure come in handy during long class nights.

    Cottage cheese dessert looks incredible!!! You are so creative! 😉

    Haha…I love playing with fake food. It’s so cool to see proper portion sizes and how much they vary from what we’re actually served—or what we’re usually served in restaurants, rather.

    I love dried mango! Trader Joe’s has a great, unsweetened dried mango that I absolutely love. It does get a little on the tough side, though, but I kind of actually prefer it that way. It’s sort of like taffy. 😀
