Easy Does It

We had a really nice relaxing night over here 🙂 PS, I Love You was one of the corniest movies I’ve ever seen, but it wasn’t all that bad either.

Here’s my glass of wine – one of our last bottles from the honeymoon! Wish I had time to visit Ledson while in CA next week!

And dinner was all American: veggie burgers, CSA green beans, and oven-fried potatoes.

Morningstar Veggie Burger with pickle, romaine, ketchup and mustard – oh and cilantro pesto!

For the potatoes, we pre-cooked them in the microwave for a bit, tossed them in some EVOO and S+P, and then baked them on a sheet of tin foil for 30 minutes or so (until crispy) at 400*.

And the green beans were blanched, chilled in an ice bath and then tossed with a Fage-Dill dressing

I kept my first glass of wine small – about 3 oz – because I had a second with the movie after dinner! 6 oz is just perfect to not dehydrate me overnight. (I’m a wimp, I know).

Looking forward to sleeping in a bit tomorrow and making the husband breakfast! Then I’m getting started on the to-do list I’ve been putting off for 2 months.

    The movie machine is SO cool! But I think the coolest part is that if you lose it or keep it too long, it’s yours after I think 20 or 25 days.

    Hi all…this is a thank you post from a loyal reader but an infrequent commenter…

    First, to Kath — besides the obvious about how much work this blog is — thank you for introducing me to 1) banana oatmeal, 2) muesli, and 3) that amazing olive oil dispenser from Crate and Barrel.

    Next, to two regular readers who posted comments way back in February or March…sorry I don’t remember your names, but one of you asked about starting a running program, and the other responded with the Couch to 5K program and the podcasts by Robert Ullrey. I have to tell you — I finished the third run of week nine today (made it 3.08 miles without stopping!) and now consider myself a runner, something I would never had imagined even four months ago. So thanks for undoing all the bad juju my high school gym teachers left me with. (Ironically, my last run of the program was on my high school track — take that, Coach Keefer!)

    Sorry for the long post…but I do appreciate all the things I learn here and want to give props!

    Hey! Your potatos reminded me of my quest…to get crispy sweet potato fries! Does anyone know how to accomplish this? If so please share! I love sweet potato fries but can never get them crispy!!!

    hey kath,
    congrats on finishing up summer school! as a phd student (finishing up some preliminary dissertation research over the summer before i start my REAL research abroad), i definitely sympathize with going to school all summer long!

    a quick question about smoothie king: what are the nutritional stats like? we don’t have it in my area, but i’ve always been a leery about jamba juice type places…

    I second jrf’s comment about the reader who suggested Couch to 5K. My finance and I started it and now we both plan our weeks around our runs. And I think that the podcasts definitely made me stick with it. I also ran a 5K last weekend and my time was 30:40…which was 3.5 minutes faster than my last 5K time.

    Just a simple Sony Cybershot with a macro (flower) setting.

    We have tried ALL KINDS of methods to get them crispy and I just don’t think it’s possible in the oven. But ours are 85% as good as crispy ones. Maybe someone else has a suggestion? We use tin foil as the base. See the video here:

    Megan: try this…

    Preheat oven to 450 degrees. Boil a pot of water.
    Meanwhile, wash and cut up your sweet potatoes to the desired shape. Once the water boils toss in the potatoes and keep at a boil for 5 minutes. Drain. Throw the potatoes in a shallow dark nonstick pan (spray with olive oil first) and add s + p (or whatever you like) and about 1 teaspoon of oil per large potato. Cook at 450 degrees for about 30 minutes, tossing the fries around every few minutes or so. Depending on the thickness it make take more or less than 30 minutes, but as long as u toss them every 15 minutes or so, you will surely have crispy on the outside, soft on the inside fries!

    I always do my potatoes the other way–oven and then get frustrated they are taking so long (40 minutes later), so then I nuke them. I love your pre-microwave method. That means they retain the crunchiness from the oven.
