Dreaming Of Hot Weather

Workout – check.

Grocery shopping – check.

Lunch – check.

Just after blogging we biked to the gym and back with 40 minutes of ellipticalling in-between. Short and efficient.

We continued the bike ride to Harris Teeter for some fresh goodies. Collards, chard, green beans, raspberries, bananas, mango, tofu, apple, cuc, spinach, watermelon, peach, 4 kinds of beans, cherries, and more.

Which turned into Pina Colada Salad

Ever since I bought a head of green cabbage last week I’ve been thinking about a pineapple black bean salad/slaw. Fresh pineapples were too expensive today ($5) so I went with canned, which ended up being good for the juice.

For two heaping salads toss together:

  • 1/3 head green cabbage, chopped
  • 1/3 cup chopped English cucumber
  • 1/4 green bell pepper, chopped
  • 1/2 a jalapeno, chopped
  • 1 can pineapple juice, drained with juice reserved
  • 1 can black beans, drained
  • Dressing: 2 tbsp coconut milk, 2 tbsp pineapple juice, pinch kosher salt, 1/4 tsp red pepper flakes, 1/2 tsp sriratcha
  • Garnish: lots of coconut

On the side I had toast with butter

For a sweet ending I tried my first adora calcium chocolate, which is packed with 500 mg of calcium! What a delicious way to get your nutrients. Loved it. Don’t think I’d eat these everyday due to the cost, but I will definitely invest in some for an after-meal boost of calcium.

My poor thumb/tendonitis is majorly flaring up again. I’m wearing Matt’s wrist brace from earlier this year. I think it is caused by too much typing and worsened by yoga. Lately EVERYTHING has been bothering it (even housework). Guess this cruise will be time for it to heal as I take a break from real life 😉

    That watermelon looks fab! I have tendonitis as well and I sleep with a brace on. It helps me a lot! When I feel it flaring up I also take a couple of tylenol for the inflamation.

    All that fresh produce looks terrif and what a brillz dressing for the salad.

    Love the salad mixture! It’s so fun to use all the yummy foods you buy right away while they’re fresh! That watermelon looks SO delicious… I’m so glad that they’re back in season again. 🙂

    I trained my left hand to do use the “mouse,” it’s helped my right hand a lot. Maybe you can switch some of your keying as well. I ended up in therapy, don’t ignore that pain, I have permanent injury on my hand.

    I’m a little disappointed in the Adora’s Vitamin D stats. As you know probably from your classwork, most of us don’t get nearly enough D. Only 100IU of D in each disc? That’s nothing, considering we need 800-1200IU daily. I was excited about them, for a treat, but will stick to my separate D softgels.

    That’s a bunch of stuff to bring home on your bike! Do you guys both have baskets? Bike riding for groceries is awesome, I bring things home in a backpack… maybe a basket is in my future. The ride there is great, but the ride home is less fun with the corner of an almond milk box digging into my back for 3 miles! 😉

    Hi Kath! I just found your blog today, a friend told me she thought of me when reading it because I love to read food blogs AND because I just graduated and completed my internship and am just waiting to be cleared to take the RD exam. I too have had a weightloss story (High weight = 250lbs, current weight = 170 lbs, goal weight = 150) and when I get to goal, I’d love to be in Shape! I’m also a runner and a triathlete, so we have a LOT in common (except I’m a bit hopeless in the kitchen… which is why I read food blogs, to get inspired!)

    Can’t say i love the pina colada salad cuz i hate dried shredded coconut, but it is still super pretty as usual!!! hahahah

    Oooh interesting calcium supplement! I’ve taken the Viactive’s for a while but they just get so expensive. 🙁 How depressing huh?
