Snow? What snow?!

Faith, Tate, Matt and I all met at 2:30 for a massive walk around our wonderful city.

We biked to their house and walked SIX miles in two hours!!

It was so so so fun to go on a walking tour of Cville!

We oogled over beautiful houses (I want to buy the one on the left but sadly it’s expensive!)

Our walk was just what I needed this afternoon! Once home, we [finally] showered and got started on an amazing dinner – perfectly suited for summertime!

Colorful Beans + Rice

Bottom – cumin-spiced brown rice
Middle – a can of black beans with its liquid simmered with 1 large sweet potato until tender, plus cumin, salt, pepper and 1 cup of Whole Foods frozen greens and shredded jack cheese
Top – mango, red pepper, jalapeno and avocado salsa with cilantro and lime
Top topping – Greek yogurt + Cholula!

Ingredients

  • For The Bowl
  • 1 cup brown rice cooked
  • 1 can black beans not drained
  • 1 large sweet potato chopped
  • 1 cup frozen greens such as spinach
  • Cumin salt, pepper to taste (about 1 tsp each)
  • For The Salsa
  • 1 small mango
  • 1 small avocado
  • 1 small red bell pepper
  • 2 tbsp chopped pickled jalapenos
  • Juice of 1 lime
  • 2 tbsp chopped fresh cilantro
  • Salt and cumin to taste about 1/2 tsp each
  • Toppings
  • Shredded jack cheese
  • Greek yogurt
  • Cholula

Instructions

  • Cook rice per directions. Season with cumin.
  • Add black beans, sweet potato, and seasonings to a pot. Bring to high heat and reduce to low, simmering until sweet potatoes are soft.
  • Add greens, cover and cook for 5 more minutes. You may need to add a splash of broth or water if it's too dry. Keep heat low to prevent this.
  • Mix all salsa ingredients together and chill for 10 minutes.
  • Layer rice, beans, cheese, salt and toppings to taste!

Over dinner we watched Inception. It was good, but it wasn’t as good as The Matrix. I felt like there were lots of loop holes that I’d like the writers to explain to me. Also, car chases and fighting scenes are so 1999. But I do always appreciate a mind-bender.

    Dinner looks great. I like Inception, but I wasn’t that impressed by it. Maybe because I already heard what it was about and nothing came as a surprise by the ending? lol

    I saw your tweet about Inception and The Matrix — I love them both and I can’t quite pick one that I like more than the other. But I loved Inception — it was amazing to see it in the theatre.

    I cannot wait until it is a little warmer and I can get out and walk more — to the library, grocery store, etc. It is so energizing to get outside!

    Never seen that movie. Have you ever tried Soy yogurt or anything before? I love Greek but wondering if I should branch out. If it’s in my fridge, I pretty much devour the tub in 2 days. No control.

      Try different yogurts: greek yogurt, goat yogurt, plain dairy yogurt, soy yogurt, sheep yogurt. Buy a few tubs of each and stock your fridge with variety.

        Thanks! Wouldn’t I have the same problem though? Eating it if there’s there? I would think that soy yogurt could be hard for digestion too.

          I don’t understand the problem? Eating it if its there? I go through a 500 mL tub of yogurt in about a day and a half most weeks. Sometimes all cow’s, sometimes all goat, sometimes a mix of goat and soy. I don’t follow any patterns.

    I loved Inception! Probably because I didn’t really get into the Matrix. And also because I LOVE Joseph Gordon-Levitt. 🙂

    I loved the movie Inception! I get what you mean by loopholes, but I like discussing those loopholes and hearing people explain what they think “fills-in-the-blank” best. Leads to some good chats. 🙂

    That’s a dinner after my own heart! I really need to try that. We have Inception on Netflix waiting for us to watch it, too. We’ve had it for two weeks; one of these days we’ll watch it. 🙂

    yum yum and yum. your dinner actually reminds me of inception. when i was putting together a post on oscar-themed foods i chose a turducken – food stuffed into food. the layers are kinda like that too!!!

    I liked Inception, but definitely agree that the Matrix was much better. 😀

    Fantastic dinner! I’m definitely saving this recipe for a quick weeknight meal. I’ve seen Inception twice, and STILL have questions about it – but I thoroughly enjoyed the visual effects, and of course Leonardo ;).

    I really liked Inception, mostly because I went into the theater with such low expectations…I was VERY skeptical. I definitely didn’t think it was Best Picture material, but it was definitely entertaining! Marion Colliard (I can’t spell her name) was FREAKY and Joseph Gordon-Levitt is nice to look at 🙂 Plus I loved Ellen Page’s wardrobe!

    Inception was a movie that really blew my mind – I loved all the layers within it, and the concept that you can control *someone else’s* dreams. What did you think of the ending?

    Hey, we had something very similar for dinner! Mango red pepper avocado jalapeno salsa with cilantro and lime (although ours also had red onions!) over rice with mahi mahi. The greek yogurt would have been a nice touch!

    Mmmm, big old massive food bowls like that are the best, and Mexican-themed ones have so many options! That’s such a great idea for cooking the sweet potato in the bean juices!

    Kath, do you prefer chia seeds or flax seeds? And what are the different benefits of each? What can one do that the other cannot?
    Do flax seeds have to be ground up before they are put in smoothies and cereal? Or should they be pre-soaked?

    I felt the same way about Inception – I kept annoying my husband with questions. How do they explain this? How could that be allowed to happen? What do they mean by that?

    Wow your layered bowl looks so yummie!!

    Did you heat the beans, sweet potatoes, green beans, and cheese all togther first. Did you make your salsa or did you get it somewhere? I have to try it!!!

    Oh my goodness! It looked yummy in the picture, but I had no idea!! My hubby and I made this for a late lunch today, and it was divine. So flavorful! Thank you for an awesome recipe!! Can’t wait to have the leftovers 🙂
