Dinner @ 70mph

While traveling down I-26 towards Charleston, here’s what I’ll be dining on…..

A big ol’ turkey and avocado sandwich on Rudi’s Organic Honey Wheat Bread. With jalapeños, pickles, mustard, fresh basil and romaine.

A bag of mixed veggies with a mashed white bean + yogurt + lemon juice + olive oil dip

Plus a small apple –

Afternoon Snack

I had my yogurt/mango from lunch around 3:30 and two hours later after my walk to the grocery store and back I started to get hungry. Early birds would have just had dinner, but since I’m not planning to eat until 7:30 or so, I had a Vanilla Macadamia Luna Tea Cake. It was not bad! It reminded me of something else I eat, but I can’t quite put my finger on it. Not sure how well this is going to take away my hunger though!

Vacation

I’ll be blogging from the beach, most likely only once or twice a day, but I won’t be answer>ing any questions until I return. I’ll be reading all of your comments, though, so comment away!! But please save any specific questions for me until I get home.

    I’m currently finishing up school, but also working at an almost all night deli (feeding drunk kids!). On Tuesdays and Thursdays I wake up around 8am and am on my feet until 5am!!! Being awake for 21 hours really messes with the metabolism and food intake. On these days I am so unsure of how to eat because of the long hours. Can anyone offer any suggestions?

    Have fun at the beach Kath! Charleston is GREAT!! But be prepared for a little indulgence(of course, there are ways to eat healthy in Charleston!!)

    Kathleen-

    I am also in college and have many long days of school, work, and homework like you. When I do have extra long days like that, rather than eating the typical 3 larger meals, I eat smaller meals every 3-4 hours. Also on super busy days, I try to keep in mind that I need to eat in order to fuel myself…so quality carbs, protein, fiber, and lots of water are a must!

    I also thought I’d add that today I tried a food that I previously thought I didn’t like – smoked salmon! And I liked it! Thanks for helping to inspire me to try new things 😀

    Michelle, my husband is trying to gain weight. A plan laid out for him by a nutritionist suggests eating 6 times a day focusing mainly on lean protein, complex carbs (brown rice, oats and sweet potatoes), healthy fat (mainly nuts, olive oil and avocado) and veggies. This is the healthy way to gain weight. He had to force himself to eat the calories in the beginning, but it is working.

    I might suggest you see a nutritionist or RD as well to get a more exact plan, but this is a good start.

    As a dietitian, I occasionally counsel those who need to gain weight. With what I do in my area of practice, I do not have long periods of time to spend with those that I am counseling. But in that short session of time, I recommend always adding something to whatever it is that you’re eating. Try not to eat anything plain. If you’re having a bagel, add peanut butter; if you’re having frozen yogurt, add granola; if you’re having milk, add some ovaltine. These quick additions to your meals can add up to some quick but healthy calories. I know this is not a menu, but I hope it helps

    Sidi- I was able to buy a Luna bar in Ontario a few weeks ago. I got it at GNC. Do you have a GNC in Quebec? If so you should be able to find them there!

    Kathleen – being awake for 21 hours a day is just not healthy for you. I completely understand where you are coming from as I had to work HARD all through university, but you have to remember that sleep is the most important element for a healthy mind and body! Do you not find that your school work is suffering?

    You are an inspiration to all of us (young and old alike-I could be your mother/54yrs. old.)

    The time and effort you put into your meals is something to be commended. The presentations are beautiful. You are teaching me to pay more attention to myself, my needs and to take the time to prepare a wholesome meal even if it is to be consumed alone. (But are you sure you are not for hire!!)
