Crackle

Hiked to the bakery this afternoon with Country Living in hand. Killing two birds with one stone!

Love that magazine. Everything is so …country chic! Lots of inspiration.

Whilst there I tried our brand new Spinach Feta bread and had two clementines that I brought in my pocket. Trying to not eat so many cookies while I’m there!

My walk back was cold and dark, but also very pleasant. I love walking and I am so thankful I do not live 70 miles from my workplace anymore.

Tonight’s dinner was a bit random, but totally delicious. I roasted up a huge pan of MamaPea’s Cracklin’ Cauliflower (with potatoes mixed in!) and we ate it with Spinach Feta bread topped with lox, greek yogurt and capers.

    Mmmm I LOVE lox, cream cheese (Greek yogurt is a great substitute too), and capers on toast or bagels! We always have them as part of our Christmas Day brunch, but I never think of making them for normal meals – I need to!

    those potatoes and cauliflower look divine. i miss lox a lot sometimes (after going vegetarian), but i’m sure i could find something else to go with that greek yogurt. 🙂

    i’m glad you had a nice walk, even if it wasn’t perfect! i miss being outside more and more the earlier the sun sets…

    yum! i’m on a major cauliflower kick lately. my current favorite is mashed with a bit of butter and tons of herbs. totally delish.

    Oo…may have to go grab that issue of Country Living to find out what those gorgeous antique’y looking utensils are all about. Love those! And Spinach and Feta together is heaven no matter what form! I can imagine that bread is awesome.

    You’re right, greek yogurt does taste good on everything! My favorite non-traditional use is on top of a grain/bean dish with hot sauce. Such a good combination!

    My husband and I both agree that MamaPea’s Cauliflower Cracklin’ looks amazing! We love curry flavours…I think sweet potatoe or squash would also make it divine!

    Glad you live closer to your workplace, too. Commuting as little as possible frees up SO many hours in the day!

    this might sound weird…i dont mean it to sound odd at all! but…i want to come to your house for dinner one night! this looks like the most deeelicious dinner…its kind of unconventional which makes it even better! haha just had to throw that out there 🙂

    I can’t remember the last time I had lox! I normally eat it with cream cheese but greek yogurt sounds awesome. And so jealous of your quick work commute. It is my dream to be able to bike to work one day.

    I am so jealous of your commute. It takes me about 25 minutes to get to work, and at least 45 minutes to get to my graduate school campus. Ugh. I’m hoping that sometime in the near future I can cut it down to a distance that’s actually walkable!
