Cool Dinner

Greetings! Chem is ALMOST OVER!!! We convinced our prof to give us another take-home test . We really do learn more going over and over the material to make sure we get the questions than we would spend studying, so I’m in favor. Certainly makes my life less stressful. I’m skipping lab this Thursday too in exchange for Americana at the Symphony!! I’ve already earned 900 of our 800 lab points, so what’s the point in going?! I might be too chicken to skip both of the last ones though. We’ll see!

On the way uptown I whipped out my emergency trail mix (or I guess it’s "Trex mix" to be proper) and had 2 handfuls. I was pretty hungry after my workout and the strawberries did not suffice.

An hour later, I had the best packed dinner! The gazpatcho was fabulous a day old – I can’t wait to make this again. It’s a great food to have in the fridge for the week and doesn’t need reheating or anything. I topped it with some avocado , and the chickpeas on the bottom made nice chew.

Plus a piece of leftover flatbread –

And a yogurt + some granola . When I have "lunchy" foods like yogurt for my early dinners, they hold me over SO much longer than a normal dinner of veggies + grains + entree. Maybe it’s the higher protein content?

With sparkling water (a new kind from Costco) at a picnic table with my lab-mates.

We actually got out a little early tonight! It’s so nice to be able to walk to my car while it’s still light out. I had an Honest-Foods Cran Lemon Zest bar on the ride home. It was the last of the 4 flavors to try. While I liked it a lot, I’m not really a big lemon person, but if you ARE a lemon person, you’d love this, as the lemon flavor is very authentic.

Getting in bed on time tonight for an early morning run!!

    Is that flat bread the same as the grilled flat bread recipe you have here on the site? Is there a way to make it without the grill? (I don’t have one 🙁 Lame, I know!)

    Hi Kath,

    Just wondering if you find that fizzy water bloats you when you drink it with meals? I’ve been reprimanded lately for my love of sparkling water but I’d always believed that it helped aid digestion?

    Just wondering what your two cents might be?

    Also, just wanted to add that I really respect your going back to school and studying so hard!

    Just got back from a long walk with my two girls… One on a bike and one in a jogging stroller. Wow, that was fun! Made Vitalicious Deep Chocolate Muffins. Yum! Have you ever tried their products. I bake them when in a big rush. Just add egg whites and water and bake! Whole wheat, lots of vitamins and yummy ingredients, and 100 calories a serving.

    Hello everyone –

    Here’s the update on the Honest Foods shipping issue:
    I got an email earlier this morning (sorry I didn’t have time to post earlier – had a full day of work and then kickboxing!) and the nice woman informed me that the issue is finally resolved.

    I haven’t had a chance to check the site yet – since I am about to go to bed. Monday nights are tough.

    But hopefully, those of you who order will have no more problems.

    is there anyone that eats around 3000-3500 cals per day on average without gaining weight? If so, do you exercise a lot and eat less on days you work out less?

    Chandra,
    You can broil it too – about 3 minutes a side (or less). Remember broiling is just grilling upsidedown! Watch it though because it’ll cook really fast.

    As far as I’m concerned there’s absolutely nothing wrong with sparkling drinks unless you’re very sensitive to air in the stomach (and more does get in there – but hopefully you’ll just burp it out!?)

    I’ve cooked the vitamuffins before – like ’em! I have a box in my garage pantry but haven’t thought to make them recently since I was on a “from scratch” kick for a while.

    Sara,

    I eat in the 2,500 to 3,000 range and I do exercise a lot. But I don’t really eat less on days I work out less. It varies according to my hunger, some days I am just a lot more hungry. I saw a nutritionist who said that I should just try to eat about the same amount each day.
