Brown Sugar Delight

I went a little heavy on the brown sugar today – my hand shook too hard when I was sprinkling it on and more came off the spoon than I wanted – but I can’t complain because it tasted fabulous!

Kath Classic made with skim, half a small banana, vanilla, flax, walnuts, brown sugar, PB and 3 dark chocolate chips!

This breakfast was about 475 kcal, 9 grams fiber and 20 grams protein.

Workout

After taking yesterday off, I was craving my workout when I got up this morning. Can’t complain about that either! It was a good one: 40 minutes Stairmaster, 8 on the Stat bike and 10 more of a lower/upper body lifting combo. Great way to start the day!

Before I left I had a small tortilla with some PB –

Monday, Monday

It’s my last normal Monday of the semester!! Today is our final lab exam in Physio (I should be studying…) and a review in Chem for our last big test on Wednesday. I have my last Chem lab session on Wed. too with our skills exam. Then next week I have Stats and Physio tests and 2 final exams the week after. In between we’re going to the beach!!

Lots of studying coming up!

    Good Morning Kath! I had a quick question about the stairmaster: I’ve never done it before and find it rather intimidating. And I know you’re a HUGE fan of it! How would you compare it to working out on other machines/muscles worked/calories burned, etc? And lastly, how would I gauge what resistance I should set it on if I’ve never done it before?

    Good morning! Kath and readers, I wanted to let you know I made a version of your Danish pancakes yesterday and we loved them. For the two of us, I blended together a cup of whole wheat flour, a cup of whipped lowfat cottage cheese, a cup of lowfat buttermilk, one egg, a teaspoon of vanilla, a squeeze of lemon juice, and a pinch of sugar. For the topping, I simmered fresh strawberries with some raspberry jam. It was just like a cheese and fruit danish! Thanks for the inspiration.

    Wow, that brown sugar-variation of your Classic Oatmeal looks like a bowl of chocolate-chip cookie dough, in the first photograph, haha! Yum!

    Kath, (this is related to yesterday’s blog)
    I was not trying to say that you are unhealthy in anyway. Just mearly trying to make a point that we all may have been obseeive about certain things related to food and exercise at one point or another. At your point in your life what you do may not be obsessive for you. but as someone who works full time and has two kids, it would be for me. I am also 10 years older than you and have a different life. We all do, so there is no judgement here. I think it is great that you are showing young girls and women how to eat healthy while having a busy life, but it is not realistic to think that you will able to do this forever. Now it seems that this is just second nature for you and you are doing this for your blog, which is ok. I hope that one day you will be able to feel liberated and not have to count calories and write down everything that goes in your mouth and what you do for exercise, esp.when you graduate and decide to start a family. You will be a great mon!
    Again, I meant no ill will about my post. I think your blog is great and you seem like a lovely person!

    Good morning!

    It’s a bit cold here in Jersey…I wore open-toed shoes to work today and my little piggies were so cold!

    Thanks so much for answering my question about carb cravings + Nectar bars. I’ll try out those techniques when those cravings hit. You’re going to be a great RD/nutritionist (sorry…they’re not the same are they? which one are you studying to be?). You give great nutritional advice! 🙂

    One question about your oatmeal. I know I should know this by now – but do you use 1/2 a cup of dry oatmeal or 1/4 cup in your breakfasts? It just look so voluminous (sounds like I’m talking about hair!) and spilling out of the bowl.

    Your oatmeal today looked extra yummy!

    Morning Kath! YUM – I love brown sugar so this looks amazing!:)

    Question about your “mocktails” that you enjoy every now and then. It looks/sounds really good. It’s just Diet Tonic and lime, right? I have looked in EVERY SINGLE grocery store around me and cannot find diet tonic…..nor do they serve it at any of the places I have been. Where do you find it?

    I was definitely craving a workout this morning. We’ve had company the last few days so I couldn’t get an official workout in over the weekend (besides walking around the zoo for hours). My run felt so refreshing this morning, and now I’m heading to my pilates class 🙂

    I’m just wondering what the other readers think about the studies that find protein restriction decreases the again process.

    Previous studies found that caloric restriction decreased the aging process, but they now think that it is actually through protein restriction that results in increases in DNA formation.

    Article:

    “Previous studies have shown that caloric restriction decreases mitochondrial oxygen radical production and oxidative DNA damage in rat organs, which can be linked to the slowing of aging rate induced by this regime. These two characteristics are also typical of long-lived animals. However, it has never been investigated if those decreases are linked to the decrease in the intake of calories themselves or to decreases in specific dietary components.

    In this study, the possible role of the dietary protein was investigated. The ingestion of proteins of Wistar rats was decreased by 40% below that of controls while the other dietary components were ingested at the same level as in animals fed ad libitum.

    After seven weeks in this regime the liver of the protein restricted animals showed 30–40% decreases in mitochondrial production of reactive oxygen species (ROS) and in oxidative damage to nuclear and mitochondrial DNA.

    Instead, there was a decrease in the percent free radical leak.

    These results are strikingly similar to those previously obtained after 40% caloric restriction in the liver of Wistar rats.

    Thus, the results suggest that part of the decrease in aging rate induced by caloric restriction can be due to the decreased intake of proteins acting through decreases in mitochondrial ROS production and oxidative DNA damage. Interestingly, these tissue oxidative stress-linked parameters can be lowered by restricting only the intake of dietary protein, probably a more feasible option than caloric restriction for adult humans.”

    I am looking for software to organize all of my recipes. I have been researching them online, and it seems that Big Oven and Living Cookbook are the two most recommended for PCs. Kath, or anyone else, do you use recipe software, and if so, do you recommend one?

    hey kath, speaking of distorted eating, does your RD program have a method for handling students who may develop an ED while they are in the program? i would think that some people study to become an RD because they have those tendencies and the pattern comes out while in school.

    Hi Kath,
    Thanks for your reply last week re: eating Vitamin C with iron. As you metioned, could you ask your prof today? I’ve never been able to find an answer about whether you must eat Vitamin C (for instance, a kiwi) at the same meal you eat veg iron (for instance, iron) in order to benefit from the extra iron-absorption, or if having eaten say, an orange, earlier in the day would be sufficient. Thanks!

    Like myself I see that you have quite a liking to peanut/almond butter. Just wanted to see if you’ve tried PB2 (www.bellplanation.com). I ordered it a few weeks ago and I am absolutely hooked!

    Does PB2 have many arificial ingredients? I’ve heard it’s much lower in calories, but I would assume it doesn’t have as good of a nutritional profile as the real thing. I lovvve peanut butter and could eat a jar a day. I love to make a lower calorie spread or dip my mixing pb with plain yogurt. It’s so good and has a really great tangy taste to it.

I’ve been reading this blog since Kath’s early days as a public site (not so far back as CK), so I’m familiar with all the different topics. If you were planning on repeating a post with new info, you perhaps should have stated that – since most readers are habitual and check most days, they know what’s been posted and what is new info.

    Hey, you’ll be in my neck of the woods (well, I’m in Jersey).

    Here’s what I’d get:

    Appetizers: Seasonal Soup (I’d keep it light so I could enjoy the other stuff!)

    Main Course:
    Sautéed Market Fish
    creamy pearl barley, peas, tomato-ginger broth

    or

    Grilled Flat Iron Steak
    potato purée, baby vegetables, red wine-mushroom sauce

    I almost always order fish when I go out (well, depends on the restaurant)…because I like fish, but don’t cook it often at home.
    If I don’t order fish – I get steak! LOVE it!

    Dessert:
    hmmm…none of these knock my socks off…I like apple crisps, fruity desserts, or chocolate type of desserts.
    So I guess I’d pick:
    Vanilla Bean Crème Brûlée with zesty lemon shortbread

    That was fun! But, now I have to accept the fact that I can’t eat any of it! 🙁 haha….

We actually live in NYC, but looove Broadway, so we try to get there every couple months. Last time was Avenue Q (so fun) – this time Spring Awakening! I’ve heard good things, so let’s hope it’s good!

    Oh! So you live around here…not visiting.
    I’ve heard good things about both of those shows too.
    The last show I saw was Naked Boys Singing for my friend’s bachelorette party…what a show! 🙂

    I’d see what kind of fish is served….if it’s not something you like, go for the steak! Steak is harder to mess up than fish….so it’s usually a safer bet too.

    The brown sugar looks fantastic! I forget how good it is melted on top of oatmeal… I need to put some on my oatmeal this weekend. It seems like good motivation to actually get up early!

    Sounds like you had a great workout, I haven’t been on the stairmaster in a week or two… maybe I should do that today!

    Although I’m not Kath I posted a reply to your question on the meal after the one you posted on. (I am all but 4 weeks away from finishing my BS in dietetics and was just accepted into the University of CA Davis Medical Center Dietetic Internship for this next year… not quite an RD yet, but well studied in the subject). Anyway, in short, yes, you need to eat Vitamin C sources along with non-meat iron sources to maximize absorption. Vitamin C is not stored in your gastrointestinal tract where the absorption occurs and will not be pulled out of your blood/tissues to aid in iron absorption. You therefore have to eat them at the same time. Meat forms of iron (heme iron) are more readily absorbed and so consuming vitamin C along with them is less of a concern but still useful.

    The Stairmaster is AWESOME!! Definitely the hardest cardio machine, in my opinion. You just can’t cheat or you’ll fall off!! I started 2 years ago when I discovered it at a level 8 for 20 minutes. I quickly moved up to level 10. Then 11. Then 30 minutes. Now I do 12 for 30-40 minutes. Don’t sweat it (haha) if it takes a little while to get used to it – it’s quite intense. But I find that a magazine really takes your mind off the fact that you’re dripping buckets and out of breath 🙂

    Breakfast oatmeal always has 1/2 cup dry, which yields like a cup cooked? It is voluminous!

    Yes, it’s just diet tonic and lime. I find it with the other cocktail mixers – usually in the soft drink aisle, next to the ginger ale.

    Thanks for sharing the article. I’m not surprised by the results, actually, but that doesn’t mean I’ll stop eating protein 🙂 But it does confirm why I don’t have protein powders in my diet – I get enough already. It’ll be interesting to see what further studies find too.

    Sorry, I don’t use any software other than Calorieking, which is no more than a food diary that can be used to calc. recipes.

    I don’t believe my program has a special psychologist or anything other than the ones for the whole school. I think we’re treated like adults like any other major – if we have a personal issues it’s not the department’s responsibility.

    Kim and Kim,
    Glad Kim was able to answer your question, Kim! I actually asked my professor and she disagreed though – she said as long as Vit C levels were optimal in the blood (which travels throughout the sm. intestines) that iron absorption would be optimal as well. She mentioned that this is mostly for iron from plants, which is more difficult to absorb than the pre-formed iron from animals. She’s not an R.D., but she does have a pHD in Physiology. But I’d probably go with Kim’s answer because my prof. didn’t read up on it – just answered based on her memory and Kim’s a smart R.D. to be and seems to be the most up-to-date!

    I like Winthrop fine – nothing really to complain about. The student union needs an update, but the classrooms and professors have all met my expectations.     If the ingredients are really just peanuts, salt, sugar then I guess there’s nothing unhealthy about the PB2. But it says that 75% of the oil is squeezed out of the peanuts, and since the oil is what’s most healthy about them, I’m not sure why you’d want to eat it? But if you have a PB addiction, then perhaps it would help with portion control. I love that you can order a semi-truck supply for $93,999.36. Maybe Peanut Butter Boy should look into that 🙂

    I love menus 🙂 I’d go with the Seasonal Soup, the Market Fish and the Creme Brulee. And some wine!! Although I’d be tempted to do the Chicken so I could try those shrimp, and might do that if the soup was really creamy. Either would be good!
