Somehow I managed to sleep waaaay too late today! Do you want to know my hypothesis? We set the coffee timer last night (which we don’t normally do) because we made overnight oats, which are ready in an instant. The coffee usually takes 5-7 minutes to brew. The timer was set for 7:45. So I think I subconsciously made myself sleep past the timer. It wouldn’t have been fun to get down there before it went off.

But as a result, I’m now running late on my day!

The overnight oats were pumpkin style and made with a new muesli by Ambrosial

The Mix

Last Night
  • 1/3 cup Ambrosial muesli
  • 1 tbsp oat bran (to fill in the gaps – liked it!)
  • 1 tbsp flax
  • 1/3 cup milk
  • 2 tbsp yogurt (all I had left)
  • 1/2 cup pumpkin
  • Pinch salt, splash vanilla, sprinkle cinnamon ( <– important for overnight oats too!)
  • Half banana
AM Toppings
  • Ambrosial granola 
  • TJ’s SB drizzle

The programmed coffee seemed to get stronger as it sat on the hot plate! This guy was STRONG!

I must pause to tell you about these Ambrosial products, newly available at OpenSky.

They are the kings of CHEWY. If Galaxy Granola is all about the crunch, then Ambrosial is all about the chew. I am a Queen of Chew!

The chewiness is due to not having any added FAT or SUGAR. And the dried fruit makes them extra chewy – the company says these are 1/3 fruit + seeds. On the left is the granola, on the right is the muesli, which was great for overnight oats! Mixins already involved and no sugar to make it too sweet.

Since I’ve already exercised my jaw today, I’m planning to balance it out with a BodyPump class. Sadly it’s raining and I will have to drive there, I think. Otherwise, time to get some bonus posts written!

    I wish I had slept in today. I wanted to but my husband’s alarm woke me up and I figured I might as well be productive. I didn’t even end up being that productive. Unless you count finishing up a Facebook page for the blog productive. 😉

      Dear Chelsey, all Ambrosial Granola products are wheat-free and all our ingredients are gluten-free by nature. The reason we do not claim gluten-free status is due to the fact that our organic oats, while certified organic (chemical- and GMO-free), are not certified gluten-free. That means there is higher possibility for those oats to carry some glutenin particles due to cross-contamination from other grains during processing. Indeed, measurement of glutenin particles in food is very useful indicator for those suffering from celiac disease. I hope this helps!

    I love muesli. I often make a big jar of it to have available anytime, and I find it works great as an oatmeal too, just by adding some liquid and other fun mix-ins.

    Sleeping in sounds lovely. Wish I could do it more often, subconciously or conciously. Somewhere along the way, I think my brain shut off my sleeping-in function. 🙁

    I overslept this morning as well 🙁 Thought I wanted to get up at 5 am, I guess when I didn’t even hear my alarm and slept until 7 am my body was telling me I desperately needed more sleep!

    oh man..to sleep past 7:45 would be a dream! I don’t think I’ve slept past 7:30 in a long while. 7:30 is my natural wakeup time. 5:30 is my alarm wakeup time!

    Body Pump is on my list of gym classes to try. So is zumba :/ That’s going to be embarassing for me!

    Enjoy sleeping in while you can. I don’t think my body would allow me to sleep that late. It’s been programmed to get up at o-dark-thirty!

    This is funny to say but everytime you eat out of that triangular bowl, it reminds me of my boyfriends cup he had to use for baseball 😉 strange to think about I guess. Have a great day despite a little drizzle!

    I set my alarm for 7:30 every morning and it’s a miracle when I get up before like 8:20… and I really SHOULD be at work by 9. I’m always crazy rushed in the am but it evens out by the end 🙂 Oh how I wish I was a morning person…..

    I am not much of a morning person so I tend to sleep ’til around 7, getting to work by 8:30 or 8:45. Today I had an orthopaedist appointment, though, so I was up a bit earlier than usual.

    The oatmeal looks amazing , Kath , my husband I are planning a trip to the wine county in dec ,I know you and Matt had been there , any pointers on what I should see or where I should go . I am looking at visiting a bunch of wineries by ourselves versus the wine tours that are offered . I am not sure which is a good option .. any thoughts? . I was looking to get more info from you , but could not find your email to send a mail 🙁 .

      Are you going to Napa or Sonoma (or both?)

      If Sonoma, I’d highly recommend the Russian River – particularly West Side Road – wines. I just LOVE them all!

    I love overnight oatmeal, yet yours looks 100 times better than mine. Hm. I can see I’ll need to borrow some moves.

    We love Cville and visit every August. I love the Children’s Museum, the gelato place, the Twisted Branch, the big chalboard, and the tiny carousel.

    What are your favorite restaurants there?

    I just love museli! I ate it almost daily in Australia with thick Greek yogurt and honey. I think it gets overlooked a bit in the U.S. unfortunately. Thanks for sharing:)

    I just wanted to tell you how much I LOVE your site. I check it for breakfast, lunch, and dinner (I live in Vegas so I can always see what you eat while I’m making ours).     Are you switching amount of weight for each track? That should help fill the time. Also after the back track, I start putting some of my weight away. Since there’s time I go ahead and make use of it so I can get out of there quicker.

    I just bought some Galaxy granola last week and I think it’s the best granola I’ve ever had. I like how granola is going the oil and sugar-free routes; canola oil is bad, bad, bad!

    Do you think a healthy cereal is better than a healthy granola? Because it seems like most granola has a lot of added sugar to it and is more calorie dense. I was curious as to what your opinion of granola vs. cereal would be..
