Cheesy

Not enough sleep 🙁 This weekend can’t come fast enough. I’m starting to break down mentally. Totally overwhelmed with all that I’m doing right now – add moving to that list! And finding a new place to live. And not really knowing when we’re moving. If I could just get this internship behind me I’d be much better off!

Today yoga.

Sunday = pedicure.

Perhaps I need a massage in there too!?

The good news is that even though we’re spending the weekend with friends (and hosting a big party on Saturday night) I think this weekend will be mostly chill.

I cut out the time to make oats this morning, but now I’m sweating from head to toe!

The Mix

  • 1/3 cup Great Harvest Cinnamon Raisin oatmeal
  • 1/3 cup coconut milk
  • 1/3 cup water
  • 1/2 banana
  • 1/2 tbsp chia seeds
  • Handful blueberries, stirred in at end
  • 1/3 cup Organic Valley Cottage Cheese, stirred in at end
  • Vanilla, cinnamon, stirred in at end
  • 1 blob TJ’s Valencia PB

    I hate to hear that you are getting stressed, but just remember, this too shall pass. No sense getting all worked up… when I start to feel like that I try to envision an ant hill. All those little guys are pretty intense on what they are doing… probably a little bit stressed out… with the load they have to carry… but from my vantage point… I can see the big picture. I can see that ant hill will stay afloat if one little ant takes a break. Thinking about that reminds me how small my role is in this world. I don’t mean to minimize individual effort (actually the opposite, all those little ants together make a mighty big hill!), but only to point out, my issues are as big as I make them. Take a deep breath, and focus on the big picture… living every day to the fullest, staying in the moment, and enjoying the journey. Ultimately… that’s what it’s all about.

    I hate that feeling of constant running around and things to do! (I’m in the midst of it myself.)

    Don’t you have AC in the house? Turn it on. It will do wonders for your mood and stress level. No sense trying to be a hero or martyr while being miserable and sweaty the whole time.

    Congrats on the house and on the scheduled pedicure. 2 great things 🙂

    I’m in the process of finding a place in Charlottesville too. I’m starting my dietetic internship at UVA in the fall, and like you, am a second “career” RD-to-be. Hopefully we can meet up at some point!

    You’re almost done, keep on keepin on 🙂

    i’m in the middle of a big move (in the transition part…in my parents basement) between condo/house and i can totally feel your stress!
    just remember…a year from now you’ll be laughing off the stress that was this month!

    I hear you on stress. I have to be out of my apartment in 24 days. I have no idea where to move or where to go because I do not have a job yet (lost mine a while back and in process of interviews in different cities). Hard to just pick up and relocate where I am when everything wants leases, and no job, etc etc…god, its stressful. I feel ya!

    Gosh, I am so with you on the stress thing! I am tired of it. Life is so unpredictable and I would really just like a little bit of “the same” to stay for a while! We are leaving on our work trip to Charlotte this weekend and I feel so unprepared! I want to be able to enjoy some of it, but I fear I am letting my lack of work and life stress get to me. I need to step back and realized that I can only do so much and let the rest go. Easier said than done! I hope you have a great day!     I’m feeling a bit stressed right now with my schoolwork coming up for my senior year in nutrition and all the applying to internships, but we can only take it 1 day at a time. After all, the only thing we are really guaranteed is another day. 🙂 Just try to breath calmly and clear your head for a bit. Everything will work out the way that it’s supposed to. My grandfather used to say, “Well, sweetheart these things take time. It’ll be okay.” I always think of him saying that in his calm manner, and I feel a wave of relief. 🙂 I hope this helps.     That’s exactly how I was feeling in April, I just needed that month behind me . . . and literally starting on May 1st it was like all of my stressed went away (even though I was still busy but the worst of it was over) . . . honestly it was like the air even smelled better because I good breath again!

    I’m in the same boat as you! We are moving June 30th to a city that is yet to be determined and we would like to buy a house before my husband begins his new job. That’s not a lot of time! All will work out though. It always does, right? And pedicures/massages definitely help 🙂

    About lack of sleep, I’ve had trouble sleeping in since school has let out since I usually wake up at 6:30. If you have extra time, be persistent, shut the blinds, and lay down again. After five days of trying this, I finally was able to fall back to sleep this morning! Summer light also takes time to adjust to. Have a good day, Kath. 🙂

    Your oats are inspiring! I’ve starting making my bf oatmeal in the morning and I try to make them as creative (and delicious looking) as you do!

    Congratulations on securing an offer on the house! That’s awesome. I know you are a serious planner like me, and the best way I know to get through the crunch times is to NOT think about the big picture all the time. Do your planning, get things organized, then just take it day by day. The big picture is sometimes like the monster crouching under the bed–he feels like he’s waiting to get us, but really it’s all in our minds.

    Take care of your self. I’m pulling for those guys to accept your counter already and let you get on with your lives! IF is was eating bread or cheese these days, I would go for an old fashioned grill cheese done panini style with meunster cheese, thinly sliced granny smith apples, and sour dough bread. Yum.

    Hi Kath!
    I have been reading your blog for quite some time now. You really inspire me as I am overcoming an eating disorder but still love to exercise and eat healthfully, and you are such a great role model for moderation and balance. Thank you. Anyway, I wanted to say hi because I recently discovered I will be transferring to Davidson College next year! I spent the last two years at New York University, and though I loved it at first, my sophomore year was overwhelmed by the lack of community at the school and the stress of living in a big city on your own as a 20 year old. I am SO excited for Davidson because I know that they have a great community and I am originally from the South and miss the warmth and hospitality. I know you are super busy but if you could tell me a little more about what you enjoyed/didn’t enjoy about the school I would really appreciate it! And if you have any tips for healthy living in the area as I’m not from North Carolina and not really familiar with it!
    Thanks a bunch. You kind of got me interested in Davidson from your blog and though I knew about the school, I don’t know if I ever would have been interested enough to apply otherwise.

    I know how you feel. I just got done taking my oral exam/turning in my thesis for my Master’s and I thought I was going to lose it 10 times in the process. Hang in there. I know you can do it! But stress/exhaustion is not fun!

    I hope you can find a way to relax amidst all the stress, Kath! The internship is super stressful, and I hope the rest goes smoothly and quickly for you. I think the way you balance everything is really admirable. I’m in the midst of transition, too, as I look for a RD-job in a horrible market…hopefully something will come up soon!

    So, are you going to be a dietician or are you going to work at Great Harvest Bread full time?

      I am going to be a dietitian who works in a Great Harvest.

      Dietetics is not limited to clinical work. It’s a vastly broad field with everything from cafeteria jobs to writing and media jobs to hospital jobs. We all have to train in each discipline (food service, clinical, community) but community is so broad that the options are endless. There’s nothing wrong with working two jobs in the food industry as an RD!
