Caught Up On Life

Well I haven’t gotten much school work done today, but I’ve been working nonstop since I left you last!

Tasks accomplished:

  1. Cleaned the bathroom
  2. Caught up on emails
  3. Mailed 2 packages
  4. Ordered more stamps
  5. Printed out Clinical notes
  6. RVSPed to a wedding
  7. Had a call with a possible freelance op ( 🙂 )
  8. Did the dishes
  9. Folded 2 loads of laundry
  10. Sorted and put away the “don’t know what to do with this” pile on my washing machine
  11. Reorganized the hooks in the laundry room
  12. Rode to the ATM on my bike and deposited checks
  13. Rode to gym, workout
  14. Showered
  15. Made a new recipe
  16. Ate lunch
  17. Did the dishes again
  18. Blogged!

So now I feel super organized and ready to move onward with my work.

But first  – this lunch was awesome!! I didn’t get back from the gym until 1:30 and was pretty hungry, but I am so glad I took the 10 extra minutes to make this because it rocked! :frog:

I made what I am calling Fiesta Broccoli Dip (<—recipe) that is inspired by Heather’s Broc Guac. Somebody ate all the avocado, so I didn’t have much to work with, but I had lots of peppers, so I made it a chunky mix instead. Cilantro is the key ingredient!

I couldn’t decide between a more-filling GH bun or the more-fun Food Should Taste Good multigrain flax chips, so I had both! The Fietsta Spread was deposited on both of these delivery carbs –

And lastly, a mango and some blackberries!! I actually got too full to finish this so I am saving it for a snack.

    Your organization skills impress me! I always have big plans to get a lot done, but after work I just feel so lazy and end up reading/cooking/hanging out with my husband instead. 🙂

    It so funny, I can do the same thing. I can be a super procrastinator OR have days like yours, where you get a ton of stuff done.

    I like the feeling of accomplishment of getting a lot of stuff done.

    I needed to clean “my side of the bedroom” because I am the messier one between me and my hubby and I’m sure it drives him crazy that there is always a ton of stuff on the floor next to my dresser, tons of stuff on my dresser. I tackled that yesterday and in about an hour it looked fantastic! I had been thinking about doing it for son long and once I got started it wasn’t so bad! Now, my dresser is neat, nothing on the floor, I bought a cute rug and tiny lamp for my dresser. I felt a huge weight off of me!

    That guac/dip recipe is SO creative! I’m going to try that soon as I’m just not incorporating avocado into my diet. I didn’t like it for the longest time (and living in avocado country, this was quite the sin) but I’m coming around. It’s so good for you and a great way to add healthy, filling fat to a meal! I can only handle it in small doses, so the dip sounds PERFECT to me 🙂

    That broc dip looks amazing… a perfect way to use up the bag I have in the fridge.

    I am also amazed that you got all of the to-do list done in the morning… it takes me days to finish the simplest of tasks

    Wow Kath, you got a ton of stuff done before lunch. I love crossing things off my to-do list, especially early in the day.

    I just looked at your recipe, and I must try your version soon. I bet the yogurt made it so creamy, and I agree, cilantro is definitely key.

    15 to-dos crossed off before lunch is ridiculously impressive! I like to go to the gym first thing in the morning so if I can do that and take my little sis to school I’m nomally home at noon. THEN my day can begin. Hats off to you!

    And I just have to say that the photography in this post looks incredible. Really, really nice. The shot of the mangos and blackberries made me want to lick the screen. Did you get a new camera?

    i adore that feeling of super accomplishment. it is almost motivation enough for me to keep plugging away at things even when i don’t really feel like it. satisfying.
