Breakfast Tacos

The thought of ground meat at breakfast makes my stomach churn, but tacos stuffed with pancake batter? My kinda thing!

I invented pancake tacos way by when blurry photos were the cool thing to post 😉 Crazy that I haven’t made them since 2008!!

All you do is flip them halfway over instead of all the way. Use a mix like Kodiak cakes that doesn’t have raw egg if you’re concerned about batter. And by the way, if you love batter, you’ll want to make these immediately!

I stirred about 1/4 a cup of pumpkin into the Kodiak cakes mix (used 1/2 a cup of mix for each of us). Toppings included banana, Nuts About Granola, chia seed sprinkles and Naturally Nutty Vanilla Almond Butter. Sweet!

I am VERY excited about today. It feels like a Friday in college because of the warm weather. Don’t know why! I’m hoping to take a half day and peel myself away from the computer after lunch to play with my husband around town.

    Breakfast tacos sound great — I love gooey batter. Too bad I never feel full from pancakes — I need eggs or oatmeal to keep me satisfied!

    Go ahead and take the 1/2 day — I’m thinking of doing that too!

      To feel full from pancakes, try adding some protein powder to your pancake batter and/or topping pancakes with nut butter and other fixins’.

    I’m the exact opposite most days! Savory food sounds awesome to me in the morning. I could totally eat a hamburger for breakfast — and have! lol Tacos? Sure, why not!! 😀

    Wow, it’s amazing how people are different. May also be a regional thing, but I’ll take breakfast burritos with bacon, egg, and cheese (or chorizo, egg, and cheese…. or sausage, egg, and cheese) over pancakes any day. There’s a little burrito shop down the street from where I work and each amazing burrito made with fresh hand-made tortillas is 1.25. Love!

    Isn’t it funny how you feel like you are in a certain time with temperatures and smells. It feels like 7th grade to me again with this weather. That’s when I moved to Georgia so I guess it was a pretty important time. Enjoy your day!

    Friday dance for sure! Sounds like a great afternoon for some biking or hiking adventures. Now that I’m to my day off, it’s 20 degrees colder than the last two days when I was stuck in an office 🙁 Still, 50 degrees and sunny is not bad for mid-February; I’ll definitely be out and about!

    I love it- “It feels like a Friday in college.” It feels awesome here too- T-shirt weather! It’s a Friday in college for me and I need to enjoy it since this will be my last year to experience “Fridays in college.” Breakfast tacos look awesome and since I LOVE batter, I’m thinking I need to buy Kodiak mix when I’m home this weekend.

    When I was younger I used to make pancake “burritos”! I’d take the eggs and bacon, put them in the middle of the pancake, roll it up and eat it…ok who am I kidding, I still do that 🙂 yummo.

      Oh, and I just wanted to add (again) that I’m LOVING all of the KERF redesign. I doubt you want to do this, but I bet you’d have a list of clients that would pay for you to revamp their blogs (me included).

      Knowing how much time and effort you put into your blog makes me want to read KERF even more. It’s really neat to watch KERF evolve.

    Wow, i HAVE to try this for saturday morning breakfast. They look soooo good. Also, I have a question: do you ever get sick of peanut/almond/nut butter? Some days (oddly enough), even though i love it, I just need a change. Love your blog!

      I haven’t yet! there are so many different kinds. Somestimes I get sick of sweet ones and move to salty then to crunchy then roasted then back to sweet!
