Blame The Squash

Boy this day flew by!!

I spent the afternoon in the hammock working on yet another Foodservice project – a 75-item timeline of theories, theorists, laws and acts that pertain to this history of management. Uggg. I’m about 25% of the way through.

Dinner came up on us quickly because of the late lunch.

It ended up being the worst dinner I’ve had in a really long time!

The tofu + kale were superb, but this spaghetti squash (which I was super excited about since I hadn’t had it in ages) tasted so off. I’m not sure if it was old, out of season, or just funky, but it didn’t taste right to me. It didn’t necessarily taste bad though, so I kept “trying” to like it doused in Country Bob’s. I wondered if I lost my taste for it? Finally I just gave up and just ate all the goodies off the top!

The BBQ Country Bob’s baked tofu was a hit though –

As was the kale

Just don’t touch the bottom!

I had my whole grains portion of dinner for dessert – a few of my aunt’s oatmeal cookies 🙂

The house is finally back in order after cleaning the whole kitchen and the floors. Hopefully I can get back to feeling organized soon. This weekend was almost entirely devoted to Foodservice, but I’m glad I got in some fun times with our friends too.

Goodnight!

Sometimes squash tastes off to mee, too – esp. spaghetti and yellow squash. Bleh.

That foodservice project sure doesn’t sound as fun as the restaurant one, but at least you have a good head start on it!

Sorry to hear about the less-than-satisfactory dinner. Good thing part of it was still tasty! 🙂

What a bummer! The rest looks good. Tofu with C. Bob’s is so good! I tried it a while back and it was yummers. Enjoy your evening!

I’ve had one spaghetti squash that was absolutely HORRIBLE! Thankfully, I tasted it before I poured and mixed in all my lovely veggies. Did Matt think it was off? If he did then it probably was. At least the rest of it was good…sorry you didn’t get to fulfill your desire for the squash, though!

Bummer about the spaghetti squash! I swear, the first 5 times I ate the stuff, it tasted “off”, and then I must’ve gotten a good one! Love the baked tofu 🙂

I have always found that soaghetti squash is HIT AND MISS! The past couple times I have had it it was seriously gross and I havent had it since. But before that, I had a streak of about 10 great squashes in a row. Beats me!

    Kath,

Almost everyday I make banana oatmeal with vanilla soy milk and various add-ins. I really like this combo because it’s super creamy and sweet. Buuuut I think it’s time I change it up a little and try a pumpkin oat combo. I was wondering if you had any ideas for making it sweeter without being too sweet and keeping it around a 450-500 calorie bowl. Thanks!

I hate it when that happens! Then you’re kind of unsatisfied by the end of the meal, and need a sweet or something else to end it on a good note. A cookie or two doesn’t hurt! 🙂

You are too cute – I feel the same way when a meal is bad….and really bad when I made it myself…as though I should make something else, but feel that I absolutely have to eat it….just because… Glad the tofu was good – looks great!

Bummer about the squash! I didn’t know spaghetti squash could be “off.” I ate it a lot this past winter when it was el-cheapo – maybe it’s just late in the season for it?

Anyway, I hope your oat bowl tomorrow is extra-tasty to make up for it.

I fixed spaghetti squash today too and ugh not that great. I usually like it too. I did mine in the microwave like the recipe said and punctured it with a fork many times and while it was cooking all of a sudden it popped and blew the door open! Made a mess of the micro.

We had an acorn squash a few weeks ago that was just “ok”. The ones we had in the fall were awesome, this one was very bland. My husband said it was because it’s not squash season anymore…. and I think he was right, especially knowing you had a similar experience last night! I guess if we stick with foods only when they are in season we really enjoy them when the seasons role back around…. something to look forward to I suppose!

I am not a fan of spaghetti squash at all. It was really hyped up to me which I think is a part of my let down.

    The tofu looks awesome, though!

    Allison,
Use an extra ripe banana. I usually still add banana to my pumpkin oats just for the sweetness. Also, a little brown sugar goes a long way 🙂

    KLM ,
    Three delicious cookies!

    Alison ,
I think you’re right – it’s just out of season.
