Biking Is Good For Digestion – Part Deux

I’ve got to be speedy tonight – T-1 hour until my time to study for Organic is up!! I actually might take my study sheets to the gym tomorrow and do the ET for some last minute cramming!

I studied on the patio all day and took a break for a finger-friendly lunch.

A hummus + spinach + mustard sandwich on Great Harvest High Fiber bread, cut into bite-sized pieces:

And some carrots and Bros All Natural Potato Crisps I found in the pantry –

I ate lunch around 1:30 and left for my study session via bike at 3:30 still feeling pretty full. But about an hour in I was STARVING and had no snack on me!! My classmates and I checked out the Barnes & Noble cafe, but there was nothing nutritionists would want to eat there – just pie, sugary drinks and cookies. Bummer! Somehow I made it until 6pm when I biked to EarthFare to meet the husband <3

We got His and Hers Salads for dinner. Mine’s on the left, his has chicken. Dinner salads are much heavier than lunch salads 😳

Since I didn’t have a snack today and got in extra biking, I knew I had lots of wiggle room to pile my bowl high with my favorites:

  • Spinach/mixed greens
  • Cabbage
  • Broccoli
  • Carrots
  • Squash
  • Pineapple + 1 strawberry
  • The Best Salmon Ever
  • 2 marinated chicken pieces
  • Edamame + Mushroom salad
  • Curried chicken salad
  • Yellow tofu
  • Noodle salad
  • A stuffed grape leaf
  • Blue cheese

Plus some pitas and 2 salad bar cookies (they were on my salad and I took ’em out to dry”

The husband and I also chose a wheat beer to split with dinner. This beer was 100% about flavor and 0% about drinking alcohol

After dinner I got to play in the store for a few minutes while he finished up work. I feel like he’s taken away my favorite toy because ironically I never get to shop there anymore! When we need something I just tell him to bring it home. But tonight I got to pick out a few groceries. EarthFare brand doesn’t have 1% milk so for fun we got 2% this week. I can’t WAIT to have that in oatmeal tomorrow!! 1% is my favorite for everyday, but 2% isn’t that bad – it’s only a small amount more fat and calories and I don’t eat much sat. fat to begin with. It’s fun to have every once in a while.

I got to meet some of his new friends, including the head of the cheese department, who gave us some fabulous cheese samples. So add on an ounce or so of cheese! We actually bought the most amazing cheese. A gouda from Holland. You’ll see it tomorrow!

The bike ride home was fast and refreshing. Our house is spick and span too, which made me happy to walk in the door. I’m excited already for oatmeal tomorrow – it’s been 2 days!!

    No oatmeal for 2 days already?!?!?!?! I can’t go ONE day without it, haha 🙂

    Hey!
    I have had Bison from HT- and Whole Foods also has bison meat….Ruby Tuesday’s makes bison burgers also (or made ? since I havent been in awhile)… but sounds like you enjoyed it so I thought I would share!

    So jealous of that bread! All the breads from GH look great!

    Good luck with the chem test tomorrow…I’m sure you’ll do great 😉

    I just got done prepping my wheatberries (first time!) for the week and I looooove their chewiness! Can’t wait to put them in oatmeal, yogurt, salads, etc. I’m glad I FINALLY found them! 😀

    Gouda cheese is amazing! My Oma always has it in the house (she shops at the dutch market a lot!). I always buy it when I can but it can be a bit on the pricy side! Enjoy!

    Matt – Congrats on the job change! As time goes on I’d be curious to know what the responsibilities entail. It sounds very interesting. I love food and also have a marketing background, but never really thought about that approach.
