Big Wet Flakes

It’s coming down hard!!!! My afternoon wishes were granted… Scroll down for the weather girl video!

Snowcast 

Brunch was awesome. Sadly Michelle and Amanda were sick and couldn’t make it, but Kelsey, Diana and I enjoyed a great brunch at the Flying Biscuit!

I started with more coffee, which made me totally jittery! I added a little creamer to this and had 2 cups.

I wasn’t that hungry since we were seated by 11:15, but I still made room 🙂

I ordered the Clifton Omelette: three large farm fresh eggs with goat cheese, mushrooms & fresh basil, topped with spicy tomato coulis. I got the tomato sauce on the side and requested 2 eggs and one egg white – because I never notice one missing.

The goat cheese was incredible! I hate half the omelet (the side with the most cheese!)

Of course I had a Flying biscuit. I ordered the whole wheat one, but we all agreed the regular ones were better (ie. doughier!). Kelsey got a regular and we spilt them half and half.

With a little cranberry-apple butter! I ate all of my regular half and about 2/3 of my WW half.

And lastly, my plate came with some fresh fruit, of which I ate 99%.

Kelsey ordered an oatmeal pancake, which comes with a peach compote. I always debate between these pancakes and a biscuit (both are just too carb-heavy to feel good afterwards) and I always choose the biscuit – but love it when I can have some pancake bites! I had 3 good bites of this with a peach slice –

The Reader came next. It was a perfect day for a movie: cold and wet. I liked the movie a lot – it was emotional, somber and thought-provoking. Love Kate Winslet! I had a few beans during the movie.

We went to Trader Joe’s after the movie for a few items. While there we requested to sample the Sunflower Seed Butter!! It was delish, but I didn’t get any since I have enough open jars at the moment. It will def. go on my list. I also had a wine sample and cheddar cheese cube.

Once home (around 4pm and 4 hours post lunch) I had a bowl of strawberries (nuked) with about 1/3 cup TJ’s greek and a tsp flax –

It was still raining when we got home. About an hour later I heard thunder and saw a flash of lightening!! Next thing I knew there was snow on the ground!

Tonight’s dinner was Snicken Chicken baked with Carrots, Sweet Potato, Cremini Mushrooms and Fennel underneath.

While he baked, we watched more Office and sipped cocktails! He made this Manhattan and I had about 25% in sips. LOVE Manhattens!!!!

I also had a small sip of mead that he brewed before Xmas and opened to sample today –

We served the chicken over a bed of baby spinach along with the roasted veggies –

I had a leg and some breast meat

But the veggies were the best part!

After dinner, we frolicked!!!

    can you please describe the prep for this dish? do you just cook the cut/washed vegetables under the chicken and the chicken fat/juice is what flavors them? thanks.

    my classes were cancelled too! the text announcement was made less exciting due to the fact that tomorrow is the first day of spring break anyway. boo! oh, yahweh, how you tease! ;P

    I used to work at Trader Joe’s, and we loved when customers asked to open a package — meant that it was our job to finish it 🙂

    I want a Clifton omelette! That restaurant looks so cute!

    I have some sunflower seed butter from TJ’s that I haven’t opened yet. Sounds like I’m in for a treat! 🙂

    The chicken looks delicious! We’re getting snow here in Northern VA, and I am praying for my office to be closed tomorrow!

    I don’t have school tomorrow because it’s Casmir Pulaski Day (gotta love living in Chicago and having this wonderful holiday every March)! Have a wonderful day off, Kath! That’s great that you and Matt will have the chance to spend it together! I can’t wait to hear your announcement in the morning 🙂

    Quick question….I bought “milled” flaxseed (Hodgen Mills) because they were out of my “ground” flaxseed (Bob’s Red Mill). Does milled and ground mean the same thing? I want to make sure I get the benefits from eating them….I know that ground is better than whole! These look the same as the ground ones do! Ahhhh so confusing! Help!

    I got snow today too! And I am in Macon, GA! I have only seen snow here maybe 2x so it was very exciting. Ours came during the afternoon and then I guess the storm moved up to you guys in NC. Have fun in the snow while it lasts!

    Yum – I love roasted chicken with vegetables. It’s actually on the menu for tomorrow night. My favorite vegetable to roast along with the chicken is brussels sprouts – if you haven’t tried it, I definitely recommend it – so good!

    wow you had some good food today! i am going to have to try that combination of roasted veggies.
    your omelet is just like the one i always get at my favorite breakfast place, only with spinach too. goat cheese, mushrooms and eggs go so well together! i’m curious, when you only eat half of your meal, do you bring the rest home with you? i never see you eat leftovers. just wondering 🙂

    Ugh!!! Im so jealous! It isn’t snowing AT ALL here in Cola town!!! But I’m happy that we don’t have to make the drive to Winthrop tomorrow!! Yippie!!! Have fun playing in the snow! If you get to make a snow angel take some pics and post them =)

    ALL THE SNOW! haha I’m originally from Charlotte so I know there is never anything (especially in the past few years)… I’m impressed its actually sticking!

    Oh how I miss the Flying Biscuit, biscuits (haha) they are amazing when warm and I love, love, love the sugar on top and raspberry jam. So jealous!

    Brunch was so fun! We have to go back there for dinner soon! That salmon sounds so unique and tasty! 🙂

    We played with Bails in the snow, too! Photos to be posted later. That bag took me way longer than I thought it would to make! 🙂

    Congrats on class beng canceled!!! And the snow!!! Be happy you have had about 10 snow storms! 🙂 think it has snowed maybe 5 tomes since I have been born! In December we had 8 inches! And we live n Southern Louisiana! ( and hour north of New Orleans) My mom said it was th most snow she has ever seen. So I just wnted to say congrats!

    You dinner looked awesome! You and Matt are such a cute couple! And I’m freaking read for he announcement!!!

    P.S. I lived in Winston-Salem from ages 2-6 and the first time I ever saw snow was the last winter we lived there! Then I moved to Minnesota – you can imagine what a change THAT was! I still have a soft spot in my heart for NC!

    Whenever there is the least bit of snow over here in England, schools are almost always closed. With me being a teacher I’m always super excited to see the white stuff falling!! Enjoy your day off!

    i am jealous of your snow day!! we have had so much snow this winter and so far only a total of maybe 4-5 hours less of work because of it (which were spent stuck in traffic getting home anyway. BOO)
    i think i may have done that dance before. it’s fun! and super silly.

    I am way up in the light pink of that map, and we got near close to 12 inches. I am SOOO sick of snow. It had finally melted enough that I could run perfectly in the streets, but now we’re stuck with all white again.

    Oh, and I think your southernish accent is sooo cute! I hadn’t imagined it, so I was surprised when I heard you talk for the first time. 🙂 (and yes, trust me, you have an accent)

    Feet and feet of snow here too. I’m in Quebec, Canada, snow day is almost everyday. It’s not always fun, but that’s the Canadian Winter. 🙂

    I don’t normally bring home leftovers from restaurants because I usually either eat it all or give it to Matt. I didn’t think this omelet was worthy of reheating, plus it would have had to sit in my car during the movie.
