Beans + Bones

The end of a crazy month!!! So excited for a day off tomorrow. I’ll be spending it eating a leisurely breakfast, packing up the house, going to brunch, cooking a fun dinner and probably some TCBY with Karen!

I arrived home from work and collapsed onto the floor and proclaimed to Matt I needed to take a floor nap. His response: "I already took one today!"

Somehow I revived myself. I think it was the pre-run sips of coconut water in my veins. I put the rest in my Camelbak for my run and it was a lifesaver.

I had friends to see and miles to run!

I think I just knew how great I’d feel after a run. And I was right! Totally energizing.

I met Foodie Fresh Kelly and Emily for a run! So glad Kelly and I finally got to meet 🙂

Us girls pounded out 5 solid, fast, hard miles. We kept a pace around 8:50 and I brought in mile 5 in 8:34! I was on the verge of exhaustion when I crossed the finish line, but I’m so glad my mojo is still in there somewhere.

Once back at home, I took a cold shower and got to work on dinner…..

Interlude: Wondering what I had for lunch!?

There’s a cafe in our hospital that’s separate from the cafeteria that serves ORGANIC food!! The RDs usually eat there on Fridays so it was a great day for me to buy my lunch.

I got half a sandwich of the famous "BMT" = basil, mozzarella, pesto, tomato panini with organic balsamic chicken

It was like this:

And on the side I got a small boxed spinach salad with hummus, blue cheese, tomato, cuc, green peppers and balsamic on the side. It was packed in so well for a small salad and was totally delish!

Lunch was TOTALLY filling today. I’m not sure if it was larger or more calories than normal or just heartier with the chicken, cheese and hummus but I was stuffed until I ate dinner!

But around 7 after my shower, I tackled this huge head of bok choy. I love this veg!!!

I sautéed it up in some Garlic Gold and with red pepper

Chopped some olives

Diced an avocado

Heated up a half cup of kidney beans and sprinkled it all with goat cheese

It was an AMAZING easy dinner! Lots of great flavors and textures.

I added a handful of Food Should Taste Good lime chips upon realizing how good they would be 🙂

Over dinner I watched the movie The Lovely Bones. I read the book when I was in high school and the movie trailer looked so good – vibrant and well made. I’m 90% through the movie now and am TERRIFIED!! It’s so scary. Don’t watch it alone!!!! It’s a gorgeous movie (just reading this sleeve I now know why – Peter Jackson!) and I do recommend it. Just watch it in daytime. It didn’t make the best My, Myself and I night movie.

I’m not sure that I think this EarthFare organic is better than Breyers (my favorite). It’s good, but it’s almost too creamy. I like Breyer’s milkiness better.

    I liked the book The Lovely Bones better than the movie, but I must admit that even though I knew EXACTLY what was going to happen, I was still on the edge of my seat during certain parts of the movie.

    Ah, well, at least someone else was in the house (even if he was asleep)! How inspiring that you ran even when you felt like crashing on the floor. 🙂 And awesome that the hospital has an organic cafe — who wouldda thunk? Great step forward for hospital food, which usually gets a bad rap as being unhealthy and/or tasteless.

    If I had not read the book and knew what happened I would have been super scared. I had to reassure Hunni over and over in the theatre that it would be okay in the end.

    I read and LOVED the Lovely Bones book but watched the movie last weekend and was quite disappointed with how they did it all. I think that they could have done a better job portraying “heaven”. I totally agree though that it was scary! I actually had nightmares that night!

    I love Stanley Tucci so I think that may be the only reason I watch Lovely Bones. I too read the book in HS…it is so intense!

    The salad looks amazing! Get some rest lady!

    Oh my gosh…I watched the lovely bones with my teenagers last week (at night). I was scared to death. I was on the edge of my seat. Oh…and I love your blog! You do an awesome job.

    lovely bones was awesome! stanley tucci was so scary and did such a good job. hard to believe he was in devil wears prada ha.

    i know this is random, but i’m thinking of getting an iphone but am hesitant to switch phone carriers. i’ve never a problem with mine (8 yrs and counting) and have heard a lot of neg things about at&t (dropped calls, no signal). are you happy with at&t? is staying with that phone carrier worth it to have the iphone?

    again, sorry this was random! love your blog!

      I would research the Droid before you switch. I have been really impressed!!

    haha, LOVE your drawings of food 😉

    The book Lovely Bones is one of my favorite, but I was very disapointed with the movie. It is visually stunning, but kinda miss the point of the family evolution.

    Oh well, maybe I just watch too many movies 🙂

    I want to watch the Lovely Bones, too! I read the book a long time ago, and it was haunting enough… I’m definitely up for a scare challenge 😉 Your lunch drawings make me giggle.

    Lovely Bones – I absolutely hated the movie, and I told everyone I know how awful it was and even wrote a blog post about it. Apparently I was one of the few! But I had just finished the book a couple days before seeing the movie and the book was so soul-stirring and beautiful that the movie could not measure up. Floor nap is sounding pretty good right now!

    Wow, that cafeteria salad looks divine! 😀 😀 It’s interesting that you recommend the movei -I’ve heard such terrible reviews of it that I decided against seeing it, despite liking the book. Food for thought…

    Funny- I just watched The Lovely Bones by myself last weekend! I loved it but, yeah, I was nervous for quite a bit of it. I bawled toward the end, but I definitely needed a cry-inducing movie, so it was good 😉

    Oh my, I watched that movie a couple weeks ago WITH friends and was terrified!!! I swore I would have nightmares. I’m such a scary movie woos, but I can’t do ’em. You’re brave!

    I love love loved The Lovely Bones! I have probably read the book four or five times and was PUMPED when I found out that it was being made into a movie. I think they did a great job!

    Where can I find Coconut Water? I’m so intrigued 🙂

    I haven’t seen the Lovely Bones because I’m worried it will scare me! I loved the book though. It’s so neat the hospital offers healthy options, that sandwich sounds delicious!

    The Lovely Bones is one of my favorite books, so I’m kind of scared to watch the movie! Sometimes, when movies don’t live up to the book..it kind of ruins the book for me.. if that makes sense… I still am curious about it though, because if it is good, then I’m sure I’d love it :-/

    Oh my gosh, “The Lovely Bones” absolutely terrified me too! Thankfully I watched it on a plane, so it didn’t impose the same type of terror I would have felt watching it alone… but I definitely think it has many cringe-worthy parts (yikes). D: Winced at quite a few scenes and couldn’t bear to watch some. It can be kind of disturbing, no?

    That salad looks like an absolutely heavenly dinner! I’ve never tried cooking with bok choy myself, but I have indeed heard that it’s good for stir fries! 😀

    Loved the book the Lovely Bones, but as much as I love Peter Jackson, Susan Sarandon, Stanley Tucci, Mark Wahlberg, etc., I was so disappointed in the movie. I rented it and half way through kept checking my watch–it was so boring! I didn’t like how they portrayed heaven either. And I didn’t like how they left out so much of the family on earth- a lot of details with the mom, the marriage, the sister and her life, etc. Oh well. I just re-read the book and it’s just as good the second time!

    I just saw The Lovely Bones for the first time the other night–I bawled my eyes out, three times! Not sure if I was just emotional that night but I thought the movie was FANTASTIC. 🙂
    I went out and bought the book, but my Mom started reading it right away, and now I have to wait!
