Bakin’ Bacon Baked Beans

‘Twas a busy day, but a good one. And I just realized I haven’t checked in on any of my internet friends today!

I pack two snacks on days when I have class through the evening. Packing a dinner takes the fun out of the meal and since I don’t have to pack one (I would if I were getting home in the 9:00 hour), I’d rather snack and come home hungry in the 8:00 hour for a comfy meal on the couch.

Snack #1 was intended for ~4:30 and I ate it at 3:30 ’cause I was hangry from my workout! The sculpt class left me with that overall warm body feeling that seems to suggest  a boost in metabolism. Perhaps the class worked me harder than I thought.

Snack #2 was consumed at 5:30 (two hours later) during MNT. Clif Nectar are one of my favorite bars, and I think I heard a rumor they are being discontinued!?

2 hours later, I was still in class and getting REALLY hungry.

So you can imagine how delicious this looked when I walked in the door –

I’ve asked Matt to cook one meal a week for me since I have my double night classes. So far he has only impressed me with deliciousness! Although I usually pick out the recipes, he sure cooks them well. These were by far the BEST BAKED BEANS EVER!!!! Instead of the traditional watery brownish brown sugar sauce, they were in a sherry tomato sauce with bacon (and brown sugar). They reminded me of my mom’s homemade tomato sauce, which is drenched in sherry. I love sherry in food!

The inspiration recipe was from Country Living magazine: Honey-Baked Beans.

And because Matt loves you all so much, he left a list of the ingredients he used on the dry erase board and I turned them into a recipe page (this one is worth saving!): Bacon Baked Beans.

With my beans I had a big salad – romaine in vinegar + oil, mushroom, pepper, zucchini + gorgonzola.

Served on a tray with a dose of Gossip Girl!

I’m sleepy and off to read a little before I close my eyeballs.

    WHAT?! I haven’t tried those bars yet. They can’t discontinue them until I’ve tried them lol.

    Hi Kath,

    I was wondering what kind of sherry you guys use in your tomato sauce? I used your recipe for tomato sauce a little while back and didn’t have sherry, so I threw some port in there and it came out great. Wasn’t sure if you used cooking sherry or drinking sherry as I’d like to try it with the sherry. Thanks!

    How cool that matt cooks up a meal for you each week. Thats gotta be nice coming home to that when you’ve been at school all day! Hope classes are going well. I start tomorrow! so nervous! 🙂

    Yummy! Any suggestions for bacon alternatives? Unfortunately, I don’t eat it and I never was a fan of it. Do you think it’ll turn out ok without bacon?

    Awww, you have a good hubby! Baked beans scream fall to me. The sweetness from the molasses/brown sugar coupled with the savory bacon is like nothing else. I think I could make a meal out of baked beans with a big crusty buttered roll. Yum! I also liked how your multi-vitamin made it into the picture!

    I almost picked up some Clif Nectar bars at Whole Foods the other day and didn’t, so I may need to go back and get some if they are going to be discontinued:(

    OMG baked beans were my favorite as a kid!!! I’ve been wanting to make baked beans for a while, so thanks for the recipe! Although I’ll have to do it without the bacon, they look amazing!

    I haven’t tried that Clif Nectar bar flavor before… I agree though that the bars are delicious. I’d be sad if they were discontinued!

    I love baked beans! Usually I eat them as a breakfast food, with eggs and pancakes. My memere got me hooked on this… 😉

    I’m not sure if there’s a difference between cooking and drinking sherry? If so, we got ours at the grocery store (in the wine section) and it’s nothing fancy. It’s medium bodied and dry.

    It can and I’ve def. experience that before. Kind of like the runner’s after glow? Rosy cheeks? After a hard workout it’s like my body retains some of the heat it produced or something.

    It will be good without bacon, but not quite as smoky + complex. Maybe subs. in some seasonings that would give a smoky effect?

    Yum, those beans look delish! The funny thing is, I have it in my head that I HATE baked beans, but I think that’s because I’ve only ever had the ones in the can. Lately I’ve been wanting to try *real* ones, so this might be the recipe to try! 🙂

    My first post to your blog, and it’s a question. Before that, your blog is beautiful and inspiring. I wish I’d gotten into eating healthy when I was a sweet young thing!

    The beans look fantastic. If you don’t use any alcohol at all, can you suggest a substitute for the sherry? Thanks – You will likely never see this post, but if so, thanks again for a beautiful blog.
