Apple Turnover

We’re going to have a high apple turnover in this house this week!

Apple Turnover Oats

I started with a chopped apple and a handful of raisins in a hot pan to cook down the apples a bit

Plus a smidge of butter (which I was hoping would scent the whole bowl of oatmeal but alas it faded away)

Cinnamon – light handed to be mindful of my spice-hating husband

When the apples were partially soft, I added 2/3 cup milk and 1 cup water

And then the rest of the oatmeal ingredients

For TWO people:

  • 2/3 cup oats
  • 1 banana
  • 1/8 tsp kosher salt

and three fresh figs

And in the very end:

  • 1/3 cup cottage cheese + 1 tsp vanilla
  • Toppings: Crunchy Galaxy granola and Nutty’s Cinnamon Raisin Peanut Butter

Despite the milk, banana, and cottage cheese, the oats were waterier than I would have liked. I think they cooked too fast given the hot apple pot and didn’t get enough time to get creamy. Better luck next time!

    I’ve just eaten 17 apple and cinnamon oatmeal cookies in two days, so I completely see the appeal of these oats! Might be a healthier way to get my fix, too… 😉

    I love that you have been using figs so much! I’ve never had a fig (besides in fig newton cookies) and really want to try one.

    Btw, I used your oatmeal pancake recipe this morning (with chocolate chips added!) and it was great! So filling. The protein from the egg whites is great. Thanks for the awesome recipe 🙂

    You could always make homemade applesauce in your slow cooker 🙂 It makes me feel like a little kid again plus makes the house smell amazing!!

    Love the various seasons represented in this meal. I like the idea of cooking down a fresh apple for oats rather than my typical apple sauce add-in….although homemade chunky spiced applesauce might be a good add in.

    I think christmas coffee is reasonable with apple and cinnamon oatmeal. Those are Christmas scents to me. Happy Labor day!

    I love apples in my oatmeal! Like Matt, I am not a fan of cinnamon – I have no idea why!

    Maybe make an apple crisp to get rid of some of those apples…!

    i wanted apple oatmeal today but didn’t have time… even though it’s labor day i still have classes. since my husband was off work we slept in & i didn’t have my usual long morning. 🙁 maybe tomorrow!

    Kath, you’ve had some incredible oatmeal combos on this blog…but this is by far one of the most outstanding looking. I bet that lightly sauteing the apples with butter is what really gives the meal its punch. Add in the figs and it’s oure oatmeal heaven. Thank you for sharing!

    No matter how the oats look, they sound incredible!
    I was finally introduced to truly amazing apples after moving to Oregon from Southern California. You truly can tell the difference in good produce if it is local!

    Yeah, I prefer nice thick creamy oats too and always get a little disappointed when they turn out too watery. Looks good otherwise though. 🙂

    When I make oats, I actually use 1/2 cup oats to 2 cups of hot water or milk.

    I then microwave it for 1 minute. Then I put a lid on it for about 10 minutes and the oats totally absorb and aren’t watery, just nice and creamy.

    I like my oats super creamy, not lumpy. I like your recipe though!

    Strange – I had apples and raisins in my oats this morning too. No figs though… I often chop and soften the apples in the microwave for a few minutes before adding them to the oatmeal. That way I don’t need any extra water. Yum.

    Apple turnover oatmeal–yum! It’s like dessert for breakfast! I haven’t tried cooking apples to put in my oatmeal, but I do love adding TJ’s Spiced Chunky Applesauce to my oatmeal in the morning.
