Anything-But-Boring Chicken

Wish I could say I spent the afternoon relaxing on the couch and napping, but instead – we cleaned. Now that we’re gone a lot during the week, Sundays really need to be cleaning days!

    • Laundry
    • Cleaned the floors
    • Kegs emptied and sanitized ( <—guess whose chore that was)
    • Basement cleaned
    • Bathroom cleaned
    • Video made

And then we sat down to a lovely dinner!

Karen joined us in company, although she had already eaten. She brought over some meatloaf for another night!

Karen brought us this half chicken from The Organic Butcher. It comes seasoned and marinated with herbs and olive oil in a handy little packet and all you have to do it cook to enjoy! We baked it for about 40 minutes in the oven and it was just like my mom’s famous herb chicken from my childhood.

I really don’t love chicken. I find it rather boring. But this one is [local + humane +] ABSOLUTELY delicious!

On the side I cooked millet, which we seasoned with a jar of Virginia Spiced Plum Chutney, coconut and pecans. What a heavenly combo! Simple seasonings and sauces go so far.

PLUS – a bunch of greens from the garden. We have about 10 kinds of greens going and we don’t even know what all of them are! Expect to see them every night for dinner until they are gone. So easy to just pick, wash, sauteed and serve – for free!

Still obsessed with the brittles. Had a piece of cashew for dessert!

    We are having meatloaf for dinner tomorrow night!

    I managed to put a dent in the upstairs packing… But I’ve been on the couch for the rest of the afternoon! Mostly playing ‘blog catch-up’ 😀

    Yum! As long as it’s cooked properly and isn’t dry, I love chicken. Chicken, cranberry, rosemary snd cream cheese pizza is my favourite weekly meal.

    Every time you mention the brittle, my heart skips a beat and I realllllllly want it! Good thing I just made a pan of incredible dessert or I’d be crying the brittle-wanting blues 🙂 lol

    Greens seared straight from the garden is one of life’s greatest pleasure 🙂 and that brittle looks nice– I’ve never been a brittle fan (gets stuck in my teeth! I’m a creamy and soft food type-a-girl), but I would love to give the cashew variety a try!

    I really like chicken, but only after moving out of my parents house where we typically had it the exact same way all the time. Chicken can be really delicious if you get creative with sauces and spices and never ever ever overcook it.

    Yessss for Sundays being designated cleaning days! They’re usually our cleaning days as well 🙂 Laundry, vacuuming, scrubbing, dusting – it feels so nice (and tiring!).

    I feel like I’ve been in a bit of a chicken rut myself lately. I’ve just stopped picking it up from the grocery store because as soon as I think of it I think “bland” – you’ve inspired me to get more creative with sauces and marinades and try it that way – thanks 😀

    PS – such a good idea for the millet – I really want to try that!

    Do you like Greek yogurt?
    I am asking because I JUST added that to my diet (see blog post), but I am looking for some easy fun ways to eat it.

      I add honey to it as well as frozen blueberries…it’s a great substitute for ice cream!

      Like? I love it! Oikos is my favorite because of its texture and the company behind it. Eat it topped with anything in the world, in smoothies or on savory dishes as “sour cream”

    One day, “kegs emptied and sanitized” will be on my to-do list. I love it!! My BF and I have already talked about “our plan of attack” when we live together and have chores. We definitely agree that a designated day would be best and that all hands of deck will work best 🙂

    I love greens! And wish I had a garden to grow them in–not this summer, we just moved. Also, I want to cook more millet, but am running out of ideas—how do you make your coconut millet? Is it flakes or coconut oil?? Thanks!

      the best is a tbsp of coconut butter, but I’m all out of that. So I just added about 2 tbsp of coconut flakes

    I would love to plant a whole bunch of different greens but since I don’t have a real plot, I’m told they would take up too much space. =( It would be so amazing to be able to just grab some from outside and toss them in for dinner! You’re so lucky!

    I think that chicken can be rather boring sometimes. However, when it is done differently, and is very, very flavorful, I like it.

    How do you control yourself from eating that whole box o brittles! I’m nixing sweets in the bud as soon as I make this last batch of brownies because some of us (ahem, me) don’t know how to eat sweets in a controlled manner. PS the kale is totally stealing the show in your food porn/pictures, makes me want them greens now!!!

    Seasonings can make or break a meal for sure! I know I’m talking to the wrong person but the same goes with cooked onions, the amount of flavor they add is immense!

    My mom has greens growing in her garden too, and it’s so nice just to be able to go outside, pick a bunch, and throw them in a salad for dinner!

    What is a brittle?! Is like the centre of a Crunchy? lol My sensitive teeth are aching just looking at the box but I could get past that for a nibble 🙂

    I really should have designated this past Sunday as a cleaning day! But ended up running a ton of errands instead. By the time I got home, cleaning was the last thing I wanted to do. I am sure I am going to regret it though since I hate starting out the week with a messy, unorganized house!

    The chicken looks super yummy.

    Mmm, I love baked whole chicken… or rotissere! That’s the best. I’m going to clean today, too… meh. I really have no excuse; I skipped doing it yesterday (had to go clean my mom’s hair salon instead, yeah me) and today I’m not working out because I’m too sore, so I definately have time and it definately needs to be done… its just not that much fun! At least it will make my mama happy when she gets home!
