Good morning!! Sunday marks the end of our holiday festivities. Over the course of this week I’ve added 2 hours to my body clock’s wake-up time, 5 new recipes to my recipage and probably about 3 pounds to my body. The King Of Beer proclaimed last night that he’s taking a week off of alcohol – if that gives you an indication of what a vacation this has been!

IMG_1696Blog

We all feasted on superfoods this morning – pumpkin smoothies and peppermint tea (coffee for some!)

  • 2 cups pumpkin
  • 1 cup rolled oats
  • 1 cup plain yogurt
  • 1.5 cups milk
  • 1 handful ice
  • Pinch salt
  • Cinnamon to taste
  1. Blend in the vita-mix and pour into bowls!
  2. Toppings included Cville Cluster granola bar crumbles, coconut and Flying Squirrel PB.

I would like to tried the pizza dough. But I also don’t have a kitchen scale. I would appreciate it if you could give cups and teaspoons measurement.

Sorry y’all, I just don’t have time to rewrite the entire recipe. It’s really easy to find out the density conversions for these ingredients on the internet.

Just be careful, I’ve done density conversions on recipes and they never come out the same (at least for me). A kitchen scale has changed my life b/c it opens many doors to other recipes.

it has taken a little while but I made the corn pudding tonight and it went beautifully with a pan blackened steak. We are thinking of finishing it tomorrow for breakfast with bacon and a little maple syrup! Thank you for the recipe. I have never had anything like it but will make it again.

i kind of love the health-food-detox that comes after a holiday. i love feasting and spending amazing time with family and friends. but i also love how it feels when i’m eating better and getting my body to forgive me. i was eating poorly for a while before thanksgiving (thanksgiving actually wasn’t bad at all), so yesterday and today, it feels amazing to be back to good foods!

I wish I could go without sweetener in my smoothies like you do! I cheat and add some Splenda, which I think is the probably my most un-healthy habit I now have (I don’t drink!) Even when I add banana, I want to bump up the sweetness just a tad! Do you really not sweeten your smoothies?

    Reply
    • KathEats says

      November 27, 2011 at 5:19 pm

Usually the bananas I add are enough to sweeten everything at breakfast – but I do use pretty ripe ones! I really don’t like things super sweet anymore – for my main meals at least. I think part of it is just using high quality ingredients (coffee, yogurt mix-ins, smoothie base) that taste good to begin with

I made an oatmeal aka doughboy smoothie for the first time this morning and it tasted like dessert! So yummy. I think I put way too much dried fruit! I’ll have to follow one of your recipes better next time. In any case, it was a nice change of pace from a bowl of hot oatmeal or a green smoothie (my standard breakfast go-tos) BTW – that vita-mix link isn’t working. Just FYI. 🙂
