A Good Egg

I friendly kitty came by around 4:30 to remind me that I had not yet voted!

Hot-tailed it to the voting station, about a 10 minute bike ride away, with Matt.

Why-oh-why did we wait until rush hour to go!?!? But during the 30-minute wait we discussed our upcoming Sonoma trip. Wheee!

Did my part:

Can we get a hip-hip-hooray for Matt, who made dinner all by his lonesome while I packed and packed.

The meal plan for tonight was: "Something from the garden, combined with eggs or sardines or beans and something grainy."

He harvested a whole row of swiss chard from the garden and a zucchini (the zucchini plant was decimated in last night’s frost but the chard + lettuce seem to have survived).

Topped with an eggin and a side of toast = world’s easiest dinner!

    I LOVE serving an egg over greens!!! When I had my tonsils out back in February this was the first “real meal” I made for myself and I ate it for dayssssss. Spinach, mushrooms, Laughing Cow wedge topped w/ an egg was the combo of choice — so good! (http://cookinfanatic.wordpress.com/2010/02/25/egg-a-licious/)

    Go for it with the early bedtime. There’s nothing better than a little extra sleep sometimes. I’ve been known to go to bed at 8:30pm before. Sometimes, my brother says I’m like I’m 80 years old or something. I just value sleep.

    I love making eggs for dinner — that is our go-to meal if we are in a rush or if we both get home late.

    You get way better stickers – here in MN you get the plain red “I voted” stickers 🙁

    Simple din, but delish! I definitely say early bedtime…which is what my husband and I are doing because we have a 16 hour drive ahead of us tomorrow (driving across north america is not cool sometimes!)

    Ugh, I too managed to vote during rush hour. Fortunately, my Matt voted in the morning and had some serious dinner prep going on when I finally made it back home — delicious caprese salad sandwiches with our very late October tomato harvest.

    Chard actually gets better after a frost – it brings out the sweetness. It should be okay for a long time.

    so the frost eventually comes even to you southern gardeners…I’ve been fighting jealousy over the fact that your garden is still bearing things such as zucchini! And believe it or not, I just harvested my last kale the other day and we’e clear up in Northern WI..

    I agree, eggs are a simple go too for quick dinners! I had scrambled eggs with sweet potato homefries tonight : ) my 4 yr. old had ballet tonight so I was hauling butt for something quick and healthy!

    is that all Matt eats too? I feel like that is the smallest portion of food! love the blog- safe travels…btw- i love the Amtrak, you can drink some wine while you travel and read- totally beats the car or airport fiasco!
