Breakfast With The SATC Girls

Rounding out my blog breakfast meals for Meredith to try, we enjoyed a lazy pancake breakfast this morning while we caught up on the Sex and the City Movie Oprah. We used to watch SATC all the time in college together – Meredith is a HUGE fan (I am too, but I didn’t even know about the show until 5th season and watched seasons 1-5 on DVD when I got my wisdom teeth out to catch up!)

Today’s batch of Cheese Danish Pancakes was made with half cottage cheese and half yogurt because we ran out of CC. They turned out great! Not quite as cheesy, so I would still use cottage cheese for the ultimate danish flavor, but yogurt does work as an alternative.

For 3 servings, I used:

  • 1.5 cups oats
  • About 1/3 cup 2% cottage cheese
  • 1/2 cup low-fat plain yogurt
  • 1/2 cup egg whites
  • Vanilla extract
  • 1/2 a large banana for batter
  • 1.5 large banana for slicing

Yum! Along with a few tacos 🙂

I’m planning to chop a few inches off my hair today!!! It’s gotten quite long and was rather annoying to manage at the beach. Not sure how short I’m going, but I still want to be able to put it all in a ponytail.

I also need to grocery shop and run a few other errands – and STUDY for my final exams Tuesday. I put the husband to work hanging his Mexican hammock in our yard (we’ve lived here a year and a half and have yet to hang it!) We have gorgeous May weather, so maybe I’ll get to study in it this afternoon!

    I’m sure Meredith loved the pancakes/tacos, what a treat to enjoy breakfast over some SATC; sounds like something my friends and I would do! Enjoy your Sunday, it’s fabulous May weather here to, yay 🙂

    So mad I missed that episode…I LOVE sex and the city…my friends and I are purchasing tickets well in advance for the movie for opening night in NYC lol… i’ve been told more than once that I’m like Carrie…esp because i’m always wearing dresses or dressed up in general when i go out lol

    I really want to make those pancakes! I actually thought of them randomly after I had already eaten breakfast and was disappointed that I hadn’t thought of them sooner!

    And good luck with the haircut, I’m sure it’ll turn out awesome! Haircuts always make you feel so fresh after 🙂

    I can’t wait until the movie premieres! Have to get some cute shoes/make a night of it! That cake looks yummy. May hit cold stone creamery for a little light cake batter tonite. Yum.

    Yum! We just got some stuff for our backyard too! Planted a fig tree..but I have a black thumb…so I doubt it will do as well as your herb bushes. WOW!
