HAPPY BIRTHDAY KANZ!!!!!!!!!!!!!!

this !

[Matt turns 27 today ]

I celebrated with a wonderful shower and a bowl of overnight oats

IMG_3439 (640x427)

  • ~1/3 cup Oikos (all I had left 🙁 )
  • 1/3 cup oats
  • ~1/2 cup milk (too much so it was pretty liquidy!)
  • 1 smallish banana
  • 1 tbsp chia
  • Pinch salt
  • Crunchy Coconut Granola
  • Pumpkin butter
  • Maranatha AB

Combine the first 6 the night before. Stir. Put in fridge. Wait overnight. Add toppings. Eat cold. NO COOKING INVOLVED!!!

IMG_3437 (640x427)

Combine

IMG_3443 (640x427)

A lucky 7 as part of 2-7!!!!!!!!!!!

IMG_3442 (640x427)

IMG_3435 (640x427)

I’m cooking (a.k.a. steaming) Vanilla Cinnamon Oatmeal for ~40 cafeteria managers today! Should be exciting.

Since it’s winter time, I haven’t given much thought to overnight oats lately (brr, they’re cold)…but your lovely bowl made me crave some. That coconut crunch granola sounds so good!

    Gotta try the oats.

Regarding the school food, is it just your particular district or has school food come a long way in the past 10-15 years? I’m in NC too and amazed with your tales of the cafeteria since I hear such poor things about NC school systems. Lucky kids!

    hi! Im Kath.

I'm a Registered Dietitian, healthy eater, and mom of two from Charlottesville, Virginia. Here you’ll find a healthy mix of real-life meals made from whole ingredients balanced with the pleasures of life, including buttercream frosting and good wine. Plus a sprinkle of nutrition, home life, beauty, parenting, and travel.
