Yes, I did have cake for breakfast

At 9:35 am, Katherine Anne was born to Clifford and Barbara Younger at Newton Wellesley Hospital outside of Boston, MA. She weigh 6 lbs 13 oz and was 19″ long.

Fun Fact: On the way to the hospital when my mom was in labor, my parents drove over a rock and got a flat tire! They had to pull over and wait for an ambulance to come continue to journey to the hospital. My dad saved the rock, which is in their garden 🙂

And my mom hilariously reminded me this morning that I didn’t breathe for the first minute or so when I was born:

Remember your first Apgar score was a 0. So your first grade in life was VERY BAD. Very very bad grade

And then it went up to something like an eight.

I don’t know why you got a zero, but I guess if you don’t breathe they can’t give you credit for anything.


I AM 26 YEARS OLD!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

You guys have no idea how long I have waited to be this age………. Well, actually you do :mrgreen: The husband and I just sat on the couch and watched our DVR box clock turn from 9:34 to 9:35. I teared up!!

I really wanted some oatmeal today, but I thought it would be fun to involve the cake, which was just staring back at me when I came down:

So I had both! (With the help of Tina, who convinced me cake must be involved when we chatted earlier this morning 🙂 )

Surrounded by superfoods, this was the healthiest piece of cake ever! My oats were made with banana, raisins, flax and almond butter.

I also had 1.5 cups of Tiramisu coffee. I have to say, I’m quite full in a bad way right now. Kinda regretting the heavy cake! But I guess today’s the day if any to feel this way at 10am 8)

Birthday Plans

We’re not sure what to do today. We wanted to go hiking, but now we’re both feeling lazy and don’t feel like driving 45 minutes to an hour to the park. I do want to do something outdoorsy though, so maybe we’ll just go walking or running somewhere nice in a bit?

My family members sent me a little birthday cash and I told the husband I would LOVE to go to pick out a few new oatmeal bowls!!! Perhaps a few plates too. Maybe we’ll bike there for our activity?

    Happy Birthday! Hope you have a great day today. I like the idea of having cake for breakfast. ;p But I have to ask how your husband made the cake. How did he form it in the shape of 26? In one picture it looks like he used a regular 9×13 pan and had the 2 surrounded by whipped cream? But then the other picture it looked like the cake was on a jelly roll pan. As a fellow baker, I am stumped! Thanks!

    I promise this is the last story I will tell today.

    When Kath was three and my mom was visiting, Mom and I were eating pieces of cake for breakfast. Kath came into the kitchen and was shocked. “I’m going to tell Daddy you are eating cake for breakfast,” she said.

    My mom answered, “Go ahead, but then we won’t give you any.”

    Kath immediately changed her tune and we served her a small slice too.

    My mom made this cake for me for my b-day this year! It was so amazing. It was so rich (even without the chocolate)!!! She just made it with the real whipped cream and all the milks the recipe calls for! Did the husband use all the milks? It didn’t look like it. Just wondering if he just used the sponge cake recipe and then frosted it. Looks amazing!

    How I made the cake:

    I began the whole procedure by making the ganache so it could cool while I did everything else. It was a standard ganache recipe that I doubled, so it was 2C cream, 18oz chocolate chips, 2T vanilla. Google around for the procedure – very very easy to make.

    As previously mentioned, I used Alton Brown’s Tres Leches recipe (google it). I multiplied the recipe by 2.5x. I poured half the cake batter into a 9×13 pan (prepped with parchment), and poured the other half of the batter between two 9″ round pans (parchment too).

    After baking, I removed the two round cakes to a cooling rack, and after 20 minutes of cooling I freehand cut them into the 26. They were probably about 7.5 inches tall.

    The 9×13 cake stayed in the pan, and I made the milk “glaze” for the cake. I did not multiply this by 2.5 – just used the regular measurements. Even still, I thought the glaze was too much liquid for the cake, so I only poured about .75 of it over the cake. Then I put it in the fridge overnight. I’m glad I cut back on the amount of glaze I used, because even the next day there was still a bit of liquid sloshing around.

    Once the 26 was cut, I began spreading the ganache over it until thickly covered. There was still tons of ganache left over. Since I don’t have any fancy cake decorating platform, I just put them on the underside of a jelly roll pan. Once iced, I put this in the fridge overnight so it would harden and make it easier to transport.

    The next day, about 30 mins before the party started, I made the whipped cream that’s part of the tres leches recipe. Again, I didn’t adjust the portions for this. I whipped it up real quick, plopped the 26 on top and you’re done! Kath suggested I sprinkle a tiny amount of coconut over the 26, just for appearance.

    Overall it was pretty easy, and my only complaint was that the cake wasn’t quite as fluffy as I would like. I think this is my fault, however, for two reasons: 1) our baking powder is really old and probably not good and 2) I may have overmixed the batter after adding the flour. I’m leaning towards the first reason because I really didn’t mix the batter that much after adding flour, and it was cake flour in the first place so there’s less chance for gluten anyway. The only thing I can’t understand is how the heck you’re supposed to get all the glaze to soak in – especially since the 9×13 cake I made was 1.25x what the recipe called for. Maybe if it had been fluffier it wouldn’t have been a problem.

    Kaaaath happy birthday!! I did the same ‘cake for breakfast’ thing the morning after my sister’s wedding when I ended up with a whole layer of her chocolate sheet cake–it went well with EVERYTHING, from yogurt to fruit to..just chunks of it on its own! I hope you’re having a great day, and I LOVE your mom’s stories, so cute!
