I tried a new method of heating up my hard winter coconut butter – put in a small container and placed above a barely-lit flame.
It worked quite well until I realized it was starting to burn!
But that moment of panic turned serendipitous when I realized I had just toasted coconut butter! After all, toasted coconut is my second favorite flavor of all times [behind butterscotch/toffee/caramel!]
SIAB with tangy Organic Valley yogurt [1 cup], banana, spinach, oats [1/4 cup] topped with Ancient Grains granola and the burnt bliss
I’m off to get my peanut butter on! Giveaway coming with lunch!!

Toasted coconut butter looks so good! I don’t think I’ve ever had it before. I love your mug! It’s super cute!
Can’t wait to see your giveaway!
Toasted coconut butter?!? Awesome.
I’ve microwaved coconut butter before for a little too long and it definitely didn’t come out toasted, more like burnt and ashy :-/ Ever since then I watch it closely.
Toasted coconut butter sounds SO good! Although I’m not sure I’d trust myself in making it the way you did, might take some practice on my part, I always burn myself or the food
Looks delish!
Love that spoon!!!!
I’m planning to make some granola bars at home and drizzle coconut butter on top. I haven’t used the jar I got from Open Sky yet!! I need to start the drizzle!
Wow that looks so pretty! love your dishes.
That bowl of oats is so beautiful!
That looks sooooo good.
The joy of unintentional discoveries! Toasted coconut butter sounds incredible!
toasted coconut is amazing. Unfortunately, once I over-toasted my coconut butter. Hope I won’t ruin yet another batch of coconut butter tomorrow morning
I adore toasted coconut too. Definitely one of my favorite flavors!
What a delightful discovery
Toasted coconut is so tasty!
Brilliant! I LOVE toasted coconut flavors…reminds me of summer vacations!
I love when those mistakes happen!
I once did that with butter and it gave what I was making a nice nutty toasty flavor
Oooooo Kath! Be careful putting that Pyrex bowl on a burner! Those can explode over open flames!
Oh gosh I didn’t know!!!
I did keep the flame really low though
That’s a great idea AND we share favorite flavors, too. My fave thing to pile on top of SIAB is TJ’s Super Nutty Toffee Crunch cereal – just a teeny bit adds amazing texture and flavor!
How did I miss that cereal at TJ’s? Sounds amazing… just added a TJ run to my to-do list!
What a fun, accidental discovery! Thanks for sharing. Hope you’re staying warm!
Yum! I love accidental cooking successes
I love happy accidents! Makes for tasty discoveries! Have a great morning Kath!
Looks delicious!! Hope the PB comes out well!
I haven’t bought coconut butter yet because I wasn’t sure of how I would use it, but a melty topping of coconut butter sounds wonderful. Coconut is probably my favorite flavor in anything. I love the matching: green smoothie, green placement; red bowl, red on mug. Nice work!
Toasted coconut butter….divine! A smoothie is on the menu for me this morning too…can’t wait!
love,
cathy b.
How do you usually warm it up? I do a double boiler style and just put the glass bowl in boiling water for a few seconds. But toasted sounds way yummier!
If you click the coconut butter link you can see my methods
LOVE all your bright colours this morning Kath! It’s -24C here today but not having a window in my office, as well as your breakfast photos, are making me forget all about the cold!
I would be so nervous to put a glass bowl over the flame. But I’ve had my share of shattered glass so I’m rightfully cautious.
But if it toasts coconut, maybe I should take the chance! haha. I looove coconut.
Wow you are lucky it didnt explode! I would of been scared to put that glass bowl over that flame! Yikes! lol! Glad it didn’t!
Ahhhhhhhhh toasted coconut, life is good ; )
Hope you have a great day! : )
Hey, the comments section is re-designed! I like it
That first picture is amazing! About how much spinach do you use for a smoothie? I'm guessing 8 ounces of total liquid in the end.
Jessica
I really need to start trying all the fun nut and assorted butters there are out there
LOVE that brekkie!! Inspired as I'm about to make mine now….
I adore coconut anything but the best is when it’s toasted! Drool…
I think you should patent "burnt bliss"
sounds great!
Ha!
Testing the new comments!!
Yum coconut.
Hi Kath!Love,Kath
Toasted coconut butter…genius!
I love coconut and toasted coconut butter sounds like an amazing topping!
I love happy accidents
Yummm!!!! Have a wonderful day, Kath!
Yum! I have a lot of coconut butter on hand.. Right now, I microwave it, but I realize that's probably not the best nutritional choice I could be making. Toasted coconut butter sounds like a great solution!
I love Toasted coconut! And what a genius way with the butter
this looks so good! i love all the colors here, what a gorgeous green!
We don't have a microwave – so very good to know about heating the coconut butter on the stove!
Toasted coconut butter sounds wonderful!
I have to admit, I cringed a little when I saw IntenseDebate in your comments. I never liked how it limits the name field.
What do you mean? Limits the length?
Yep. If you exceed X amount of characters in the name field (not sure how many) it throws an error and you have to do it over. At least it saves your data so you don't have to enter it each time.
Mistakes are always how inventions start!
Ive been wanting to make coconut icing for some coconut pepper chai infused cupcakes… You think I could replace some of the butter in a buttercream recipe with coconut butter? Dunno if it would give the same consistency when mixed with icing sugar and egg white… hmmm….
I've tried using coconut butter/oil in icing recipes and it definitely gives a looser texture. What I usually do when I want that coconut flavor is to add some coconut extract and toasted shredded coconut to my favorite buttercream recipe. It's just that you have to use so much coconut butter/oil to get any flavor out of it, and by then you've added so much that the frosting is too liquidy.
I think it might tend to harden at room temp..
I will let you guys know what i ended up doing!
I linked to you in my blog
Check it out
Mmmm…I can just smell the toasted coconut butter right now. I'm definitely going to try that sometime!
Love the coconut burnt "bliss". Looks absolutely delicious.
MMmmm, toasted coconut….that is a happy accident!
Toasted coconut butter ahhhh sounds way too good! I will add that to my list of things to make from your blog!!
I had the same 'I burned the coconut butter' panic when I stuck it in the microwave for too long – but I was pleased with the result! And, I just had a SIAB this morning myself!
Hahaha, what a brilliant "accident!" I love when that happens!
OMG! I've been trying to figure out how on earth to make toasted coconut butter! I've tried toasting the coconut first and blending it and it didn't turn out the way I thought. Thank you for accidently figuring this out!! Legit made my day
your smoothie in a bowl always looks so much prettier than mine!
also, i like the new comment platform – i saw that sarah (SHU) changed to this one today too!
did the glass hold up on the burner like that? I'd be scared to break it!
Oh yeah, toasted coconut's the way to go!
Ooooh, peanut butter? Yum yum. Is it a peanut butter give away???
I'm not sure I could distinguish between coconut and toasted coconut; I don't eat a lot of coconut.
I love how green it is! Like a monstaaa:) Slash now I have to toast my coconut flakes!
Toasted coconut butter is brilliant. Though I have no shame and just chip off the coagulated stuff and let it melt in my mouth.
Mmmm I just got some coconut butter! I’ll have to try this!
I am sure this may have been mentioned already in comments previously,
but you could put that little glass bowl of coconut butter into a heated pan of hot water on the stove
(same method some use to melt choc!)That would work well!
i like the new comment section as well! toasted coconut butter looks yum
I'm glad!
Genius!!!!!! Can't wait to toast my coconut butter!!
sounds delicious – i love toasted coconut too!
i tried to make coconut butter and it did not work so well….
im gonna order some through opensky NOW!
Oh yeah! Toasted coconut … that is brilliant. Happy accidents are the best.
Trying to melt a whole jar of coconut butter once, I immersed the whole jar in the microwave. Two minutes later, the whole thing burned to a crisp. Yep, you can bet I was NOT one happy camper
Mmmm toasted coconut! I love it! You're lucky it didn't REALLY burn!
Coconut butter can be fun in the cold temps, I usually put the jar in my food dehydrator for about 15 minutes to soften. But it looks wonderful in your breakfast – yum! Happy Monday!
You moved to Intense Debate! I have had it for 18 months on my blog. Not always perfect, not always easy, but I was a blogger blog and it's LIGHT YEARS ahead of blogger's commenting features.
Would be interested to hear why you switched to them if you are in a sharing mood
The ability to email my responses is priceless. Hope this one goes through!! Also thought you guys might want more subscribe features. This is a trial run – if we hate it I'll take it away!
I LOVE toasted coconut too…sounds amazing!!
Is it just me or does it look like your coconut butter is levitating ?!
Hi Kath,
So with your new comments posting system, does that mean that the comments from older posts are no longer viewable?
Jan
No, they should be there. If they aren't right now, they will return when the plugin finishes installing
Ohh – love that! Toasted coconut is definitely one of my fave flavors.
Please don't put glass on the hob. It can be really dangerous. Look up pyrex explosion on YouTube. Not pretty.
OOH I HOPE I WIN! My cuisinart broke and I am devastated.
By the way Kath, you totally inspired me. Today I GUT CLEANED our kitchen, pantry, and cabinets. Now there is NOTHING on our counter, aside from olive oil, a jar of oats, and a jar of couscous. It looks so pretty. It was quite a feat, given that I am a full term pregnant woman! I am trying to clean the rooms as you talk about them….so you may just induce my labor by making me work my butt off
Hi Kath! Meet your latest blog stalker! I found you, I think, through Nate’s blog. I was catching up on Google Reader this weekend, and OMG, how exciting for you and hubby to be opening a Great Harvest. Congratulations!!!
Sincerely,
Monica
I love accidental discoveries like this! Toasted coconut butter sounds good.
At the moment, I have to keep my coconut butter in the fridge because it’s so hot here that, in the pantry, it’s so runny it’s like water! Love the toasted idea though!
Haha – I “burnt” my coconut butter the other day too, and I was wondering if anyone had ever done the same thing!
