Toasted Coconut

I tried a new method of heating up my hard winter coconut butter – put in a small container and placed above a barely-lit flame.

It worked quite well until I realized it was starting to burn!

But that moment of panic turned serendipitous when I realized I had just toasted coconut butter! After all, toasted coconut is my second favorite flavor of all times [behind butterscotch/toffee/caramel!]

SIAB with tangy Organic Valley yogurt [1 cup], banana, spinach, oats [1/4 cup] topped with Ancient Grains granola and the burnt bliss

    I’ve microwaved coconut butter before for a little too long and it definitely didn’t come out toasted, more like burnt and ashy :-/ Ever since then I watch it closely.

    Toasted coconut butter sounds SO good! Although I’m not sure I’d trust myself in making it the way you did, might take some practice on my part, I always burn myself or the food 😉

    That’s a great idea AND we share favorite flavors, too. My fave thing to pile on top of SIAB is TJ’s Super Nutty Toffee Crunch cereal – just a teeny bit adds amazing texture and flavor!

    I haven’t bought coconut butter yet because I wasn’t sure of how I would use it, but a melty topping of coconut butter sounds wonderful. Coconut is probably my favorite flavor in anything. I love the matching: green smoothie, green placement; red bowl, red on mug. Nice work!

    How do you usually warm it up? I do a double boiler style and just put the glass bowl in boiling water for a few seconds. But toasted sounds way yummier!

    I would be so nervous to put a glass bowl over the flame. But I’ve had my share of shattered glass so I’m rightfully cautious. 🙂 But if it toasts coconut, maybe I should take the chance! haha. I looove coconut.

    Yum! I have a lot of coconut butter on hand.. Right now, I microwave it, but I realize that's probably not the best nutritional choice I could be making. Toasted coconut butter sounds like a great solution!

        Yep. If you exceed X amount of characters in the name field (not sure how many) it throws an error and you have to do it over. At least it saves your data so you don't have to enter it each time. 🙂

    Mistakes are always how inventions start!

    Ive been wanting to make coconut icing for some coconut pepper chai infused cupcakes… You think I could replace some of the butter in a buttercream recipe with coconut butter? Dunno if it would give the same consistency when mixed with icing sugar and egg white… hmmm….

      I've tried using coconut butter/oil in icing recipes and it definitely gives a looser texture. What I usually do when I want that coconut flavor is to add some coconut extract and toasted shredded coconut to my favorite buttercream recipe. It's just that you have to use so much coconut butter/oil to get any flavor out of it, and by then you've added so much that the frosting is too liquidy.

    OMG! I've been trying to figure out how on earth to make toasted coconut butter! I've tried toasting the coconut first and blending it and it didn't turn out the way I thought. Thank you for accidently figuring this out!! Legit made my day 🙂

    I am sure this may have been mentioned already in comments previously,
    but you could put that little glass bowl of coconut butter into a heated pan of hot water on the stove
    (same method some use to melt choc!)That would work well!

    Trying to melt a whole jar of coconut butter once, I immersed the whole jar in the microwave. Two minutes later, the whole thing burned to a crisp. Yep, you can bet I was NOT one happy camper 🙂

    Coconut butter can be fun in the cold temps, I usually put the jar in my food dehydrator for about 15 minutes to soften. But it looks wonderful in your breakfast – yum! Happy Monday!

    OOH I HOPE I WIN! My cuisinart broke and I am devastated.

    By the way Kath, you totally inspired me. Today I GUT CLEANED our kitchen, pantry, and cabinets. Now there is NOTHING on our counter, aside from olive oil, a jar of oats, and a jar of couscous. It looks so pretty. It was quite a feat, given that I am a full term pregnant woman! I am trying to clean the rooms as you talk about them….so you may just induce my labor by making me work my butt off 😉

    At the moment, I have to keep my coconut butter in the fridge because it’s so hot here that, in the pantry, it’s so runny it’s like water! Love the toasted idea though!
