Pancake Tacos!!!


I made these entirely by accident today – what a classic serendipitous occasion! But I suppose it’s continuing on my week of Kids’ Breakfasts :mrgreen:

Here’s a Banana Taco


On the others I put AB+J


My trio of tacos –


So how did this happen? Well of course I tried to flip a pancake and bent it in half instead of flipping it – the batter stuck and I thought “that looks just like a little taco!” AND, if you’re anything like me and like DOUGH + BATTER, you’ll love these a little undercooked (with the batter gooing out….) If you don’t, just let them cook a bit more.

Hmmm, such a great idea. My kids will love it. We have a long week-end in Quebec this week-end and I’ll spend three mornings with them, so, one of it it’ll be pancake-tacos.

Are they well cooked inside? They look pretty thick.

They are kind of battery on the inside – but since there’s no raw egg (just the whites from a carton) it’s not a danger. Just let them cook a little longer if you don’t like batter.

A recipe alternative… Add peanut butter & raisins to the banana taco for a yummy protein boost :)

My children will LOVE these!!! My 2 yo son never wants to eat them with a fork, and picking up a pancake with syrup oozing isn’t mommy’s fave thing to clean up. ha! :)

This just totally made me smile because I am always amazed by your beautiful pictures and wish that I could take such amazing photos of food — but my camera stinks (it’s been dropped about 50 times by my kids) and it takes me forever just to get a decent photo that doesn’t have a glare or that isn’t blurry. To see how far you’ve come is inspirational! I love your recipes and photos :) What camera do you use now?

Just made these this morning and they were delicious! I used bisquick heart smart mix and added a scoop of vanilla protein powder, vanilla, and cinnamon. I topped them with peanut butter, pumpkin butter, and fresh peach jam. The batter tasted like cake batter! Love your blog, and all the recipes! I’m fulfilling my dietetic internship starting this august to become an RD, so you’re a big inspiration! Don’t know how you fit in all you did during your internship!

perhaps it isn’t too nutritious, but in lieu of syrup… I like to put a bit of nutella in a pancake to make a “choco taco.”
