Chicken Salad Cabbage Cups

I’m not a huge fan of chicken salad in general (too much mayo!), but this version made with yogurt, apple, berries, walnuts and celery is refreshingly good.

  • 1/2 a grilled chicken breast, cubed (leftovers from the weekend)
  • 1 large apple, diced
  • 1 stalk celery, diced
  • 1/3 cup-ish blackberries
  • 2 tbsp chopped walnuts
  • Dressing: About 1/4 cup Fage, 2 tsp dijon mustard, sprinkle majarom, sprinkle celery salt, pepper.

Toss all to combine.

I steamed four cabbage leaves and made little cups to eat it with:

mmm, something about food wrapped in lettuce just makes me smile haha! This looks great, I’ll definitely be trying it out this weekend. How would you feel about maybe adding some curry to it?
