Pancake Tacos!!!

I made these entirely by accident today – what a classic serendipitous occasion! But I suppose it’s continuing on my week of Kids’ Breakfasts :mrgreen:

So how did this happen? Well of course I tried to flip a pancake and bent it in half instead of flipping it – the batter stuck and I thought “that looks just like a little taco!” AND, if you’re anything like me and like DOUGH + BATTER, you’ll love these a little undercooked (with the batter gooing out….) If you don’t, just let them cook a bit more.

Hmmm, such a great idea. My kids will love it. We have a long week-end in Quebec this week-end and I’ll spend three mornings with them, so, one of it it’ll be pancake-tacos.

Are they well cooked inside? They look pretty thick.

Sidi,
They are kind of battery on the inside – but since there’s no raw egg (just the whites from a carton) it’s not a danger. Just let them cook a little longer if you don’t like batter.

A recipe alternative… Add peanut butter & raisins to the banana taco for a yummy protein boost :)
