You Say Goodbye, And I Say Hello

Hello weekend!

IMG_4143 (640x427)

And hello easy leftover dinner!

IMG_4139 (640x427)

Class was held tonight on the Catawba Indian Reservation where my professor works. It was a nice change of scenery, but I think we were all a little distracted and restless tonight.

Amazingly, I didn’t get hungry for 6 hours after my raw food adventure. Hello fullness! It was the same effect that I had when I ate at The Other Side Cafe in Boston and was full all.day.long. I do not think there is anything amazing about raw foods. I think in both cases I just ate a LOT of calories + fat + fiber in the excitement of trying new things, and all three are very filling!

So I came home at 8PM still not super hungry. I decided to make a nice salad out of my leftovers. Matt had baked tofu and cooked some green beans and I had picked up this head of lettuce at EarthFare last night because we had no salad ingredients all week!

I headed up the ingredients and served them on a bed of red leaf lettuce tossed in balsamic

That little treat you see is a small piece of blueberry cornbread Lauri brought for me! Hello sweet bread!

IMG_4146 (640x427)

The wine was in celebration of 3 tests in 3 weeks and the upcoming 3 day weekend 🙂

I’m excited to have a leisurely breakfast tomorrow, get some work done and spend some time with my husband.

Ah that salad ensemble made me really want a WF salad! I always have a little square of bread pudding from the salad bar (why is it always there!?) in the corner of my greens concoction.

Changes of scenery for class are always fun, but, agreed, it’s new thngs to look=distraction! Esp during an evening class

How interesting to have class at a native american reservation. I grew up near an Oneida reservation and was always fascinated by the history and culture.

Have a great three day weekend!! Enjoy your hubs…
