This is going to be one of those photos I come across in the dead of winter and long for the warmth and greenery of spring! The sun is twinkling through the trees and turning everything neon today.
And boy was I thankful to see the sun up already when I left for Plyo Max at 5:45 this morning! It gave me a little extra burst of energy to workout early. Class was the usual jumping dance party!
Back home, Matt was just finishing up making Mazen and me some oatmeal before he left for a run.

Rachel and I worked on her post for tomorrow while Mazen was at school until 11:15 when I walked to meet his class for their end-of-the-year picnic!
I packed a big lunch, but not too much eating occurred. He has such cute friends, and they spent most of the time running in and out from under this big tree.
I polished off the curried chicken salad and a few red peppers in hummus.

Speaking of that chicken salad, I first had Ina Garten’s recipe at Sarah’s house not too long ago and put it in our meal rotation. The recipe is quite simple, and the chutney and cashews take it to a whole new level! I replaced some of the mayo with Greek yogurt, which worked like a charm.
We served it last night for dinner with a spinach salad dressed in a chutney dressing with red peppers and Everything crackers for scooping.
Papa (Matt’s dad) is coming tonight for the weekend, and I’m sneaking away with Lynsie for a quick girls trip tomorrow night! Check Insta for updates : )
