What We’ve Been Eating

Air Fryer Sweet Potato fries and more meals

I’ve been doing a rough meal plan for each week and it’s been helpful to organize the fresh meals, frozen meals, ingredients we have on hand to use up, Plenty nights, and plan some takeout nights. All three weeks we have steered off course quite a bit for random reasons. In the above, for example, we had plenty of Shrimp leftovers so we had that for two nights instead of the one planned, which bumped the steak night. Also we forgot to actually BUY a steak on our grocery trip, so there’s that! We’re still trying to do a mix of home-cooked meals, pantry/freezer staples, and takeout to support the restaurants we love.

Conmole

A newish restaurant in Cville we have yet to dine in is Conmole! We ordered takeout last week and it was FAB! They specialize in Oaxacan Mexican cuisine, and we ordered the sampler package which had plenty of food for the two of us: a tamale, a big beef empanada, the cauliflower side (which we loved!), the pork mole verde that came with tortillas and rice.

We enjoyed my Caprese Pasta Salad another night with grilled chicken sausage tossed in. Loved this combo!

Breakfasty Dinners

We made veggie and cheese omelets and toasted Pie Chest biscuits on the side.

Lunchy Dinners

We have realized that all dinners don’t have to take an hour to cook. In fact, a lot of our dinners lately have felt more like lunches. Like this night we had biscuits again with arugula salads. (The kids probably had quesadillas.)

Plenty Dinners

I usually order one night’s entree from Plenty per week. Last week it was Turkey Burger Sliders with potato wedges that we all loved! I get a 4 person serving and there is usually enough for leftovers for lunch one day too.

Birch Dinner

Birch had pasta, avocado, cheese, and chicken and ate NOTHING here! He was not happy despite the fact that we know he likes avocado and cheese if it’s shredded. He is not a fan of meat at all.

But here’s a dinner he DID like! Cheesy eggs, sweet potato wedges, a pouch. (OK he did not actually eat those zucchini sticks.)

One food he’s been all over this week are these sweet potato wedges, cooked in the air fryer. They were perfection.

Leftovers –> Lunch Salad

We also ordered Vivace take out and had some delicious pizza! Plus a salad with a side of their bread and olives. I took the leftover olives, bread and salad dressing and made my own salad creation for lunch the next day. I am all over arugula these days as a salad base.

Plenty also offers breakfast bakes, but I usually have them for lunch! This one was packed with tomatoes and veggies and came with a side of fruit.

On weekdays I usually make smoothies, oatmeal bowls or yogurt bowls for me and the kids. PB&J oatmeal at its best!

And if I do make eggs, it’s with toast and fruit!

PB toast before a morning run. If I have a more basic breakfast like this, I’m likely to have a little snack after my workout – or even an early lunch in the 11:00 hour.

    The meals look great! Oatmeals and or yogurt bowls are always a staple for breakfast for me, as well!

      I have an Eufy brand that actually never went to market. I love it for homemade fries, kale chips, and anything with panko but admittedly I haven’t used it all that much in 2 years.

    Are you guys disinfecting your groceries after you bring them home? I used to do this– but have since read articles stating that it’s not necessary. I’m just interested in your (and others!) perspectives and habits. So much craziness!

      Half the time I have and half the time it was just waaaay too much to wipe each one down. It felt like a waste of precious wipes. I try to be extra careful about washing hands right before eating the day the groceries come home, and we have been washing all of our fresh produce that someone could have touched.

      It makes awesome fries, but if you don’t think you’re going to use it all the time, I wouldn’t get it JUST for fries. I’m not sure I’d buy it again if it broke!

    I had a toddler dinner fail recently with my 15 month old. Some days I guess they’re just not in the mood!? It’s a humbling experience hahaha

    Please tell me how you did your sweet potato fries.

    Have you ever put tofu in a smoothie? I’m looking to up protein without meat.

    For the reader who asked about the air fryer, I ordered a small 2 qt one from Amazon and love it. I live alone and use it for reheating chicken, chicken nuggets, frozen fish, eggrolls. It is a Chefman brand and was very inexpensive.

      We coat them in olive oil, salt and cinnamon and push the potato button on the air fryer 🙂 And I have used silken tofu in a smoothie before! Have you thought about adding a protein powder? Naked Nutrition has some pea protein powder with a very simple ingredient list.
