What I Ate: The NatureBox Version

Good morning! We’re getting some wintry weather again today. I have no idea how you guys live above the Mason Dixon line this time of year! We still have snow on the ground from our first storm, and I don’t think snow has stuck that long in my whole life.

NatureBox sent me a selection their latest and greatest snacks, and yesterday I incorporated many of them into my meals to showcase for you guys.

Starting with….breakfast of course! When I’m browsing their snacks, I always jump to the granola first. The Vanilla Macaroon Granola I had the first time I got a box was deeeelicious! This time I tried the Ancient Grains Granola and was not disappointed. It had that nice clustery hard crunch that I look for when I’m topping oatmeal or smoothies. I put the granola on top of a bowl of overnight oats I prepared the night before. Typical portions: 1/3 cup oats, a few spoonfuls of Greek yogurt, enough milk to mix it all together, a pinch of salt, a sprinkle of cinnamon. I topped it all with a lovely drizzle of drippy 365 Peanut Butter and had cara cara orange on the side.

Mazen and I drove to the gym after breakfast where he went to his toddler yoga class (SO CUTE!) and I went to strength challenge. Lots of kettlebells were swung by all!

My friend Naomi fed me a cheese cube in the cafe after my workout, which actually did take the edge off my hunger until we were home and ready for lunch!

I heated up leftover salmon and cauliflower from the previous night’s dinner and served that over a salad dressed in Whole Foods brand Caesar.

And the secret topping? Praline Pumpkin Seeds!! My favorite choices at NatureBox are the flavored nuts and seeds because they are so versatile – salad toppers, out-of-hand snacks or unique ingredients in your favorite homemade bars. These were so good on a salad!

After lunch treat – Dark Cocoa Almonds : )

In the peak of the afternoon I had a NatureBox dried pineapple ring, a few NatureBox cinnamon almonds and a Babybel cheese to tide me over to dinner.

Dinner was a parsnip soup and avocado grilled cheese from Cook Smarts.

The soup was just OK, but the sandwiches were awesome!! We used some smoked gouda cheese and the chimichurri sauce from salmon night. Yummmm!

To round out the night, I had a mug of tea and a few of the Lemon Almond Biscotti Bites. You can see that Mazen was into those as well : )

    My 2.5 year old is going through a picky phase and he definitely loves snacks more than meals. I would love for him to try the Blueberry nom noms since he is all about the blueberries and “‘nola bars” lately. 🙂

    I have been eyeing NatureBox for a while now and haven’t pulled the trigger. We are definitely a household with a snack rut — my husband is always content with nuts of some sort, but I get tired of the nuts and raw veggies rotation. I’m thinking some of those pretzel pops or toasted sesame sticks would be a magical change from the norm!

    I already get the monthly subscription and the fig bars are by far my favorite. I also love the Santa Fe Corn Sticks and the Blueberry Nom and Peanut Butter Nom Noms. I also just tried their beef jerky for the first time and it is delicious. I’m a huge fan of Nature Box 🙂

    I love the ideas you give for making these yummy things part of a meal instead of only eating them out of hand for snacks. You’ve given me loads of tips like that over the years that have really changed how I eat. You’ve made me a salad believer, helped me see how to wiggle extra veggies into soups and stews, and taught me about the beauty of a cereal/yogurt mashup bowl. I used to get mags like Eating Well and Cooking Light for those kinds of tips, but I’ve learned much more from you. So, as always, thanks!

    Umm…I don’t even know! The chocolate hazelnut granola looks amazing…as does the dark chocolate pretzel pops and jalapeno white cheddar popcorn! I vote I want to try everything!
