Veg Out With The Easter Bunny

The Great Harvest Honey Whole Wheat Easter Bunny and I had a great time enjoying a vegetarian Easter dinner!

After showering and getting dolled up, Matt and I packed up the Envitote, grabbed an apple and headed out the door.

Need a way to eat an apple and PB on the go? Take a bite first and fill it up! Preferably with Nuttzo!

We arrived at Emily + Casey’s to find their patio doors wide open and flowers everywhere!

We made a few mocktails with POM, club soda and lime for the group

And broke out the appetizer – my cilantro pistachio bean dip (recipe in the previous post’s comments) and some whole wheat baguette crostini that Matt made

Matt and I were in charge of making swiss chard + asparagus risotto 🙂

Simply made with veggie broth, thyme, asparagus, chard and Arborio rice.

I also had a smallish bowl of soup, and tastes of all the rest. Split an egg roll with Matt (egg roll -haha). Everything was delicious!

The show stopper of the night was Diana‘s Clean Food Fruit Tart!!

It tasted even better than it looked!!!!!!!!

The crust was OUT OF THIS WORLD!! Made from teff flour, it was like a ginger cookie and graham cracker all in one. Vegan, gluten-free and healthy and fit all of our needs :mrgreen: Even my mouth’s!!

[Can I just add that I just found a bunch of tart crust crumbs in my BRA!?!?]

Fun-filled night!

I’ve got a huge day tomorrow and need my beauty (and brain!) rest. I’ve ended my ability to work out in the mornings, so I’ll be back to evening workouts from now through July 1. Not too excited about having to go after work, but I am super excited about nothing between my warm bed and a delicious breakfast!

    Yum that looks like an amazing easter feast!
    I guess the good thing about dining with food bloggers on easter is that you wouldnt have to worry about any bad food choices!!!!

    Your party food looks delicious! I feel ya on the evening workouts… I much prefer to get it out of the way in the morning… but sometimes schedules just don’t allow it. At least it isn’t forever!! BTW your NYC trip pictures are great! I used to live in the city… and it brought back so many good memories!!

    Wow! All that food looks fabulous, particularly the risotto—yummm. I was wondering if you had any advice for working out in the morning–I’m graduating from college and have to take graduate classes this summer which start at 8. I prefer working on in the AM but can’t stand the idea of having to get up before 6 every day. Do you have any advice to avoid afternoon work-out avoidance–my major weakness?? Thanks! 🙂

      You say you can’t stand the thought of getting up early – but my first question is what time do you go to bed!? If you want to get up before 6, you have to go to bed before 9. There are some tips on my Q+A page too.

        Very valid point. So you recommend a full 9 hours? I definitely need to try to get to bed early, but I actually won’t be able to some on some days because I will have one class running until 10 pm (tell me about it) on Mondays and Wednesdays.

    I read daily but don’t often comment. Just wanted to say thanks (from another North Carolinian albeit displaced) for all the food ideas and real, doable advice. It’s nice to read those that have been able to maintain weight loss.

    I understand your gripes about working out in the evening, at the end of the day the last thing I want to do is work out. However, I always feel so much better once I do.

    In the first shot, the Virginia rolls look a bit like rocket propellers attached to the Bunny… if only they’d shoot the delicious bread across the world to me! 😛 Or propel me to this eveninng- what a wonderful night of gorgeous dresses, food, and friends. So envious, but it does make me a bit happier to think of heading home to my friends this weekend, after 4 months’ travelling!
