Upper Crust

Hey y’all!

I had a really nice afternoon at work. I learned all about insurance billing (it kind of sucks, but I also like forms and completing mindless tasks on a list, so I enjoyed it 🙂 ). We ended the day with two client sessions, which were awesome to sit through. I was just a fly on the wall (Mary was awesome and full of enthusiasm and good advice!), and I can’t wait until the day when I can lead my own sessions 🙂

With the back-to-back sessions, I didn’t really have a chance to eat a snack. I started to get really hungry at one point, but then it kind of tapered off a bit. Just shows you’ll survive. But BOY was I ready for this when I walked in the door:

One food Matt does really well is pizza. So I suggested it for his meal tonight and he slam-dunked it! The crust is his specialty 😉

Homemade whole wheat pizza crust topped with sautéed eggplant and shitake mushrooms (in some Worcestershire sauce for “meat-y-ness” he said), heirloom tomato, a light layer of Napa Valley Bistro sauce, fresh basil, mozzarella, goat cheese and pecorino. I told him to go lighter on the cheese on mine

I have a theory that the hungrier you are, the longer it takes for fullness to register. I tried to eat slowly ,drank some water, and waited a full 45 minutes before I went in for a snack. My stomach was definitely not quite satisfied!

Blueberries and half of this amazing Amazing Greens SuperFood bar. These did the trick 🙂

The flavor was awesome and the chocolate outside was perfect for a super dessert! It definitely did not taste at all like vegetables or greens. More like a LaraBar coated in chocolate.

I’m off to read in bed. Why has every House Hunters this month been a re-run!?

    Gorgeous pizza, the crust looks both chewy and crisp. The nutrition consults sounds like a lot of fun too, I’m sure this will be a big payoff after all the hard work you’ve put in.

    Has anyone else not had a not good experience with the Green Superfood bars? I tried the chocolate-covered one and could only stomach 2 bites. I love me some chocolate, and it’s not like I can’t take other healthy bars (Lara bars, for example), but these just were not at all good for me.

    DId you know that uppercrust is a famous pizza chain in a few parts of India serving absolutely yum pizzas – they have around 10-15 types of veg pizzas and only very few meat types.

    I love House Hunters! Every Thursday at 9pm on HGTV there is a new episode, but you’re right in that all other days are repeats. However, this week was “International Destinations” where they showed the top five place to live internationally, per voting from viewers. This is on at 10pm and the number 1 choice is airing tomorrow. 🙂

    That pizza looks wonderful, especially the crunchy crust! Mmmm…

    Just a quick question: as a future dietitian, I’ve learned that dietitians don’t usually get reimbursed by insurance companies unless they perform specific services under Medicare. Has this changed where you are? In any case, it sounds like you’re having a great time in your internship! 🙂

    More and more ins. companies are covering nutrition care. Blue Cross BS of NC covers 6 free visits a year for those who sign up for a healthy living program in advance, so that’s where a lot of these are. Diabetes and other medical diagnoses codes and doctor referrals are often covered as well. It’s kind of hit or miss.

    Kath-
    I too find that when I get over hungry it takes a long time to feel satisfied.

    An endcronologist friend told me it is because your blood sugar dips so low that it takes a while for the levels to increase back to normal and tell your brain to stop eating.

    I really struggle with this (need some better high protein snacks and I don’t do bars due to nut allergy – potential for a nut is high and not worth the risk!). I also really struggle with the whole being satisfied vs feeling full.
