Up In The Air

We are [hopefully] flying safely through the airwaves of the East Coast at the moment, en route from Charlottesville to New York to Boston.

Flight

Larbs moved to Boston after graduating college in 2008 to pursue a graduate degree in school psychology at Northeastern. She’s nearing the end of 3 years and is in the middle of a full-time internship at the moment [read about it on her blog, Taking Back My Twenties!]

Her studly boyfriend, Matt, moved with her to Boston and works in consulting. Since Matt was recently accepted to Duke’s Fuqua School Of Business to pursue an MBA, they’ll be moving back south to Durham next summer. So this may be our FINAL trip to Boston (at least to visit them!)

Healthy Living Summit

If I’ve learned anything in 3.25 years of blogging it’s that taking photos of an airplane is TOUGH. Imagine getting everything all laid out on your tray table and realizing your camera is packed at the bottom of your bag below the seat. Or that your lens is too cropped to get the lunch in view without standing up. Hence, a pre-photographed (and blogged!) lunch:

Our connection is just 29 minutes in LaGuardia, so you can bet I’m not going to gamble with trying to get something to eat there. How about something fresh and fun!

I used the last two English muffins to make us cheese + jam sandwiches. Threw on some neutral spinach for nutrients and color! I have pumpkin butter, Matt has Crofter’s.

    I’m up in the air right now, too! We’re on our way to L.A. We always bring food with us on flights – make things so much easier/cheaper/healthier. Safe travels!

    Wish I had packed lunch for my flights/airport time last weekend.

    Though the flights themselves were short (Only going from San Francisco to Orange County, so about 1.25 hours), I wound up running short on time when heading out to the airport on Friday morning when departing for my trip. I was STARVING and couldn’t wait, so I had to buy airport food when I got there. Then my flight coming home got delayed so I had to eat at the airport again. Talk about mucho dinero spent that I could not afford!

    I’m so glad you agree that spinach is neutral! I made a lot of peanut butter and spinach sandwiches this summer to take hiking, and none of my coworkers got it. I got them to try my green monsters, but they wouldn’t believe that sandwich could be tasty.

    ahhh so lucky you got wifi on your flight (unless this was from the airport). i was dying for wifi on our flights to c’ville and back. four airplanes total, 0 wifi.

    love the veggies with the bow… maybe you’ll start a new trend- “give the gift of veggies for a healthy life”. 😉 (if that doesn’t work, i have pondered starting a national adopt a rabbit campaign: “eat more veggies than your small rabbit!”.) have fun in boston! have lots of dunkin’s french vanilla regular to keep you warm!

    I so pack my hobo snacks when I travel! I hate not being able to find food and I am not nice when I am hungry! Apples are the perfect take along food as are sandwiches and veggies! Nice lunch and I hope the flight is going well!

    Airtran had Biscoff when I flew to DC from ATL for Thanksgiving, but they didn’t have it on the way back. Only pretzels. Boo.
