The New KERF

OK, I lied. I’m back! Had a few minutes before we leave again.

I feel this HUGE sense of relief now that we’re out of the house. My whole life is in a box and it feels kinda organized!! And being at Karen’s condo is fun – I’ve never lived in a new, modern dwelling in my life and it’s awesome!!

Last night was totally exhausting!! After everyone left, Matt and I stayed at the house, cleaning, sorting and packing. We still had to load everything for the summertime into our cars!!

Somewhere in there I drank a Gatorade (definitely needed the glucose and electrolytes today!) and shoved a peach – the last of our fruit – into my mouth sometime in the 5:00 hour.

By 6:30 we were famished and on our way to Karen’s!!!

More unloading. More unpacking. A quick shower and we were out again and headed to Diana and Dan’s for a housewarming party! They bought a house last year and have been fixing it up bit by bit. This was my first time there – so cute + beautifully decorated!

Diana had tons of great food – she really outdid herself with the details!!

I put anything in my mouth that looked delicious

Wish I could have gotten more beautiful photography of the food spread, but we were a little late and I was too hungry to try to recreate the beauty!! They had a whole buffet of delicious cookout foods!

I made a mini slider on a Great Harvest Dakota bun (custom made for Diana!!) with a spelt burger, tomato and fixins

Plus a big salad with tortellini on top! A BBQ chicken skewer, and some chips and black bean spread.

I was still HANGRY for food so I tried a taste of each dessert, including a Filipino rice pudding Diana made! They were all delish!

The night ended with a taste of Diana’s vegan Pina Colada pops!

As you saw, Matt and I crashed like rocks. He had been up since 2:30AM!!!! Poor guy was delirious.

This morning was our first in Karen’s condo – welcome to the new KERF!! Goodbye mosaic table. Hello swanky condo!

While I love French press coffee most of all, how nice was it for the drip coffee to turn on for me!!!!

My toppings were all still in boxes, so I used Karen’s TJ’s Sunflower Butter. LOVE the texture and consistency. The flavor is nice and smooth – like a mild peanut butter.

Whipped banana oats made with soy milk topped with Lingonberry preserves, Sunflower butter and a few chopped nutz –

Look at that sunbutter MELT!!! (Yeah, my portion was a bit generous 😉 )

We’re watching Ken Burn’s documentary on the national parks. As Annie says, “I think I’m gonna like it here!!”

Matt and I are going to the house now to clean more and finish things up. Goodbye house!

    Oh my gosh, I just started reading your blog and I love it for multiple reasons. For one I JUST moved to Charlottesville with my fiance literally 2 days ago and for the other I love delicious, creative, healthy food!! I just graduated with a degree in dietetics and start my internship at UVA in Sept; did you just finish yours? I can’t wait to see where the Great Harvest Bread is going to be, I grew up in Oregon and my mom and I used to go there for bread at least once a week! Love the blog and good luck with the move!!
