Texas Caviar

No, I didn’t have something different for breakfast today. But according to Marge Simpson in last night’s episode, oats are also known as Texas Caviar 😎

Up at 5 this morning to head to the gym. I had about 1/3 of a leftover whole wheat biscuit for a pre-workout snack topped with a bit of jam. It definitely wasn’t as good as yesterday 🙁

Workout

30 minutes Stairmaster, 15 on the stat. bike, and 15 abs and stretching. I did the tear-out booklet abs workout from Women’s Health. It was hard – a little too hard. I hate it when ab exercises quickly cross the threshold from “If I do 5 more I’ll feel the burn big time!” to “I can’t even hold this pose in proper form it’s so hard, much less feel a burn.” But I do feel like I got a decent ab workout.

Breakfast

I wanted Classic Kath Rolled Oats this morning, so that’s what I had! They tasted so. good.

Rolled oats made with 1/2 water, 1/2 milk, 1/2 a banana, plus cinnamon, flax, vanilla, a touch of brown sugar, toasted walnuts and almond butter. I added a splash of hemp milk at the end, but really all it did was reduce the temperature since it was cold! Guess I’ll save that for cereal and smoothies. (I’m planning a fresh pineapple-vanilla hemp milk smoothie with some of our leftover pineapple for either this afternoon or tomorrow!)

Nutrition ~ 430 kcal, 7 grams fiber, 17 grams protein.

Off to classes and Physio lab. Then studying for a test all night!

    question for the husband:
    i have made “kath’s breakfast bread” twice now. my husband and i both really love it–especially the texture–but for some reason, the flavor is very muted. it tastes delicious with peanut butter on it, but is not as flavorful as i normally like when its just plain.

    if i want to add just a tad more sweetness to it, what should i do? add more honey? will this interfere with the yeast somehow (i think i’ve read that before)? i’d love any ideas/suggestions.

    Rachel,

    Try doubling the honey. I don’t think the yeast could ever be affected by too much honey – it’s their favorite snack!

    Just know that sugar weakens the structure of bread (because it gelatinizes) so your crumb will be a little softer and you may have some difficulty cutting slices. But doubling the honey isn’t adding very much, so give that a try first.

    Also if you want more flavor, use steel-cut oats. Use the technique in Oats n’ Seeds bread (soaking overnight). You won’t have to alter any of the other ingredients. And nothing like sprinkling some whole, uncooked flax seeds on top before baking for a toasty hint.

    Kath, that’s a great idea to go to a store that sells bulk and see if they sell steel cuts. Do you know if TJs does? If i do it at whole foods (not sure if they have bulk either) its probably the same price as buying a whole container!

    Follow up question though, what do you feel the pros and cons are of oatbran versus oatmeal? Is one more filling? Thanks and good luck with your test 🙂

    Marcy – I don’t think TJ’s has bulk bins – at least the one near me doesn’t. You can usually find them at independent health food stores if you have one near you.

    I can probably answer the oatbran vs. oatmeal question for Kath.

    Oatmeal’s combination of flavor, texture, and volume is unrivaled by any of the other hot cereals. While they all have their unique points of flavor, and regular rolled oats are probably the mildest in flavor, they get a huge boost due to volume. Oatbran is gritty and toasty flavored, but it only produces moderate volume. You just can’t match rolled oats for letting all that starch out into the liquid and making it creamy. Steel cut oats have a delicious nuttiness and crunch but they’re just too dense and you feel like your breakfast is so small.

    Oh, and we kinda agreed last night that bulgur is better as a rice substitute, and not an oat sub. Which means, yes, you’re not allowed to eat it for breakfast ever again.

    Actually, related to that, I occasionally will have rice for breakfast with an egg stirred in as it finishes cooking. Add a little cheese or bacon and some hot sauce – yum. I’ve also done savory oatmeal with avocado and hot sauce. It’s delicious (if you’re not one of those nerds who puts cinnamon on everything).

    Just out of curiosity, how many hours do Nectar and Lara bars seem to keep you satisfied?

    I’m looking for a portable mid-afternoon snack (for library studying – I’m a college student, too!), but I need something that will hold me over for three or so hours.

    Your breakfast looks so lovely and comforting – gotta love biscuits and jam!

    I’m sure your question is directed at Kath, but since I eat Larabars everyday, I thought I could help with an answer – Larabars keep me full for up to 3-4 hours, as do Nectar bars (the cherry-pomegranate flavor of the Nectar bars has the highest fiber amount, so that one is the best choice out of the Nectar bars for satiety; and for flavor!)

    The calorie counts are always for the “all together/from above” photos so you can see what XXX calories looks like.

    EarthFare has it for us, so I bet Whole Foods will. Our TJ’s doesn’t have bulk stuff.

    I think the husband covered the oatmeal vs. oatbran. It’s really just a matter of personal preference – both are very healthy and nutritious.

    I usually have about 100, sometimes more, sometimes less.

    I’d say LaraBars have a slight edge because they have more kcal per bar, but both will keep me from getting too hungry for 2-3 hours. Note I didn’t say full because I don’t think either are really filling like a big bowl of yogurt/fruit or a half serving of oatmeal as a snack would be. That’s why I use bars to delay hunger when I’m on the go rather than as a daily snack. I’ll take fresh food over a bar whenever I can.

    Just wondering how you feel about nutmeg? Personally, cinnamon + nutmeg is one of my fav spice combos, and I always add both to my oatmeal. I also like to chop up an apple when I’m making oats on the stove and mix it in before adding the oats- it tastes like apple pie! Just some suggestions if you were in the mood for something different 😉

    Mel,
    I like nutmeg but find it to be a little stronger than cinnamon. I need to remember to add it at times! I really like it on apples, but not as much in oatmeal and “softer” things.
