Surprises

I came home to a surprise package sticking out of my mailbox today – from the Peanut Butter Boy!!! I mailed him a jar of EarthFare PB to review a few weeks ago and he thanked me with a jar of a BUTTER TOFFEE PB!!

Of course I tasted it immediately (luckily I was ready for a snack too 😉 )

Followed by the official snack on some new homemade bread, plus a swig of hemp milk.

I was really hungry from 4-6 today. While my snack ranked high in taste, it was low in hunger satiety. I really need wet heavy things like yogurt, cereal, fruit for afternoon snack and this was so light in weight (but way more calorie dense than you’d ever think!). I was planning to try my Coconut LaraBar today but totally forgot when I walked in the door!! The suspense is killing me, but since I only have one I want to savor it when it’s a perfect LaraBar occasion.

Surprisingly Delicious Dinner

The husband brought home a surprise 24 oz beer tonight – I had a Hers version 🙂

Dinner tonight was a “use of the fridge” experiment that turned out fabulous!!

I cut up our block of TJ’s tofu and marinated it in a BBQ-sauce-like mixture of:

  • Apple cider vinegar (1/4 cup?)
  • 4 dashes Worcestershire
  • Sprinkle garlic powder, red pepper flakes, S+P
  • 2-3 tbsp ketchup

Baked at 425 for 40 minutes = perfection!

We served the tofu over a pile of frozen/thawed pineapple polenta I made a while back (mystery recipe anyone!?). The sweet/savory combo was awesome. Plus some sauteed CSA beans and lastly, some chewy feta cheese.

Disappointing Surprise

I don’t watch many TV shows, but the husband got us hooked on The Office last spring and I think it’s hilarious. Exactly my sense of humor. I thought it was on at 8 tonight and was all excited about watching it until I found out it’s at 9, which will be too late for my early AM cycle class bedtime 😥 Guess I’ll have to watch it tomorrow.

This weekend is Davidson Homecoming. None of our friends are coming this year, but my sister is flying in from Boston tomorrow and I’ll be picking her up at the airport around lunchtime, then we’re heading uptown for a night out tomorrow. Saturday will be spent up at Davidson (tailgate, football, oyster roast @ SAE), and on Sunday my parents are driving down for a lunch with all of us. It’s a big weekend and I wish I’d gotten more studying done today! And I REALLY wish there wasn’t rain in the forecast!!!

    HOORAY FOR PB BOY PACKAGES!!! I love that the pb is made with hempseeds!! So fun 🙂

    HELL YES FOR ‘THE OFFICE’ SEASON PREMIERE TONIGHT!!!! I’m pumped.

    My university’s homecoming is this weekend as well – can’t go though, since my dance showcase is this weekend. Ah well!!

    Your dinner looks amazing! I just picked up some more tofu and wanted to try another flavor – the BBQ looks great!
    Also, how was the Toffee PB? You didn’t say whether or not you liked it?!!

    You are so disciplined, I couldn’t help myself on Monday and stayed up until eleven to watch heroes. And I still got up and ran early the next morning it seriously can’t be good for you. Have a good class tomorrow.

    Hmmm… methinks I must start sending PBB some samples too.

    And what kind of beer…? Did I miss that? I was just looking at some tonight in the store, but didn’t buy any. All my favorite pumpkin / oktober / fall ones are out now, but boy they’re getting more and more expensive each season.

    Hi Kath,

    We are obsessed with The Office! We don’t stay up past 9pm either, so we Tivo all our favorite shows. It really helps to cut down on our tv watching time since we can skip the commercials. An hour show turns into 40 minutes! The only drawback is waiting an extra day to watch them!!

    this is really kind of random, but i know you love salads. i found the most amazing combination i wanted to share with you…. its a bannana cashew salad.

    lettuce
    bell pepper
    tomato
    cucumber
    advocado
    1/2 bananna
    5 or so whole cashews crumbled
    topped with annies light honey mustard (or whatever dressing you like)
    optional: rosemary white beans

    just thought i would put it out there!

    ok– definitely got lost on a blog surfing adventure! i clicked on a blog you have on the KERF homepage, which led me to another, and then another, and then ANOTHER….and now it’s almost an hour later!

    Enjoy that peanut butter while it lasts! It’s about 1oz smaller than most peanut butter jars, but while that’s not much, you’ll see how quickly the jar seems to empty!

    If I have time I press it in some paper towels for 10-15 minutes all in one block under a bit pot (I’m too lazy to cut it up and make a mess with heavy books and all). Don’t worry about the texture – it’s nice and chewy when baked!

    I did even see the beer label, but it was REALLY flowery and bitter – I wasn’t a huge fan, but the hub. loved it.

    Banana on salad!!! That sounds awesome. I never eat bananas at other meals because I usually have one for breakfast, but I will just have to have 2 one day and try it out.

    You will love the Office premiere – it was hysterical!

    Do you do the “book” trick with your tofu? Where you press it under something heavy for a half hour? I just bough my first block and I’m afraid the texture is going to freak me out! I’ve heard the book trick helps. Thoughts? 🙂

    Hi Kath, been reading your blog for a while now, but I just got so excited today after seeing that you (or your husband, rather) had a Bulldog pint glass! Which means one of you must have been down here in New Orleans for one of the Wednesday free pint glass nights! Anyway, love the blog, and I think what you’re doing is wonderful.

    My boyfriend is also graduating from Tulane this May, but from the law school instead of undergrad. Maybe I’ll spot you in the graduation crowd! Have you been to New Orleans? You’d love running around Audubon Park (and also the Whole Foods that’s walking distance from it).

    Hi Kath! I’m also a senior at Tulane, but will be graduating early this December to pursue two more years of school at UCONN for Dietetics! Love all of your dedication to the blog–it inspires me everyday. keep it up and hope you enjoy your time in New Orleans when you come to visit!

    Our weekends sound similar: tonight is dinner followed by recorded Office premiere. Tomorrow is tailgate and football. We, however, have 90* sunny weather in the forecast.
