Girls’ Night at EarthFare!!

I was quite on edge this afternoon with a looming presentation to give tomorrow. I’m normally not that nervous about public speaking, but I feel like the expectations are set high for this one because it’s all professional and all, so I’m feeling the pressure! I haven’t had time to practice it out loud yet….and time is running out!

I stayed at the office late trying to finish up references and made myself late for dinner. I decided to go home even though I’d only have 20 minutes when I got there. It was worth it because I brought in the trash, packed my lunch and cleaned up a bit. Check and check.

But I gotta get to bed ASAP and have about an hour’s worth of blogging and emailing and business stuff to do, so I must push onward!

I didn’t eat a snack today because I was all nerves (plus lunch was pretty filling!)

Hello salads!

Mine had all the usual – a bed of veggies and lettuce, a variety of spoonfuls of pasta salads, the best salmon, butternut squash salad, some blue cheese, black beans and tofu. ‘Twas a good one! A little smaller than my lunch ones and appropriately a few dollars less!

We gabbed for an hour and then went to pick out coffee and granola.

Well, that was a pretty fast post after all!

Matt’s somewhere over the USA right now. Karen’s thankfully picking him up. I’m going to bed because Emily and I are running eight miles tomorrow AM, but I can’t wait to see him in my dreams!

    Fabulous article, delish salad and good friends = great day!

    You will be amazing at the presentation. I always tell myself that nerves are really just excitement. Focus on the excitement and the pressure/nerves will back down a bit. 🙂

    I’m super jealous of your awesome Earth Fare salads. My local Earth Fare (and by local I mean 20 mins away) doesn’t have the best salad bar. BUT their deals are awesome!!!

    I’m taking a class called Green Catholicism, and we’ve been learning a lot about sustainable eating lately. Have you read Wendle Berry’s “The Pleasures of Eating” ? It’s a wonderful essay. It makes me want to only eat food that’s had a “happy” life.

      They are usually about $10. Quite the mix of healthy expensive ingredients though, so I think it’s worth it.

    Best of luck with your speech! Just take a ton of deep breathes beforehand and keep your focus on the message of your talk, rather than miscellaneous anxieties that can creep in the head.

    goodluck on your presentation! That salad looks amazing. Just curious. How much do you eat organic? For me, it’s so pricey that I really have to pick and choose. Is that what you do? I find I can only afford 1-2 items that are organic/week. What is your weekly food budget? It seems like you eat some pretty pricey foods! Just curious! Thanks! Erin

      I pick and choose too. I try to get apples and peppers, but it depends on the sales and the price gap. I’m doing it more and more though.
