Simple Summer Supper

I was required to use up some fridge contents for dinner, which meant no pantry or freezer staples were allowed. I was thinking of a chicken sausage gumbo, but time ran out! Instead I made a delicious sandwich on some seeded grain bread Karen brought over along with a corn on the cob and some steamed veggies. Simple, summery.

Corn , with Smart Balance and Crazy Salt. I’ve grilled corn before, but I wasn’t quite sure how to cook it indoors with the water boilage and all, so I did a Google search and found this great informational page: How to Cook Corn on the Cob . I often Google something I haven’t cooked before to see how others do it and figure out the most efficient and tasty method.

And a "steam in the bag" green bean, carrot and wax bean blend that I picked up for quick weeknight dinners. Also with Smart Balance and Crazy Salt –

Honest Foods Farmer’s Trail Mix bar . I saved this to eat after Chemistry but I couldn’t resist and ate it 40 minutes early because class was draggggggging. It was great!!! It reminded me of an almond cookie – I can’t remember what they’re called – it kind of tasted like marzipan!? I really love these bars’ texture in general- they are moist and chewy and last a while. I think the Apple Cinnamon is still my favorite.

    that sandwich looks lovely! it is satisfying to use up stuff from the fridge. i feel like i win when i can make a yummy meal out of stuff that was just lying around.

    Hey! Thanks for all your suggestions. I’m so excited about spending Saturday out on the lake on the boat and then going on a date Saturday night. Right now we have reservations at Noble and Sonoma Modern Kitchen. Any suggestions for breaking the tie?:) Thanks and have a great week!     Kath –
    Where do you get your Honest Foods planks and squares? I know you received some as samples…are you still working on the samples or did you go out and buy some more?
    Amazon only has two flavors. 🙁

    On a totally unrelated note, have you seen the film “Once”? Such a sweet movie. It was not a mainstream movie, but I think it won for ‘best song’ at the Oscars. I’m asking because the actress in it looks exactly like you! Well, a brunette version. Simliar face structure, mannerisms, ‘wholesome-ness’, and sweet nature. 🙂 Check it out!

    Anyone else see the film and see the resemblance? 🙂
    The whole time I was watching it, I kept saying that she looked like someone, but I couldn’t figure out who! Finally, as I was watching the special features, it hit me. 🙂

    I just got back from grocery shopping and found the Honest Foods granola planks (I got the blueberry ones) and I’m really excited to try them in my oatmeal tomorrow! They’d better be worth it for $5.49/box (aka 2 bars)! 😉 Wish I coulda got some free samples! They didn’t have the bars though…at least not that I found…

    Oh, and for corn, you can just microwave it in its husk for 3 minutes/piece and it comes out just fine! I know you’re not a big fan of the microwave sometimes, but it’s easier than a boiling pot of water! And the strings come off easier.

    Anyone ever try/think of going on a more raw food based diet?I keep hearing how “green smoothies” are sooo good for you(a green like spinach blended with a fruit like mago).It sounds like they have amazing health benefits if you drink one daily.Anyone ever tried this or have more info or thoughts?Thanks…

    I buy my chicken sausage from Trader Joe’s. They carry their own brand, but I buy the Applegate Farms one. I think the flavor i get is the spinach and feta cheese. It’s delicious.

    Hi Kath,

    This is my first comment on your blog, but I’ve been reading for a while and I love it! Anyway, I had to post a comment when I saw that you use Crazy Salt! Is it the Jane’s Krazy Mixed-Up Salt?? If so, I LOVE that stuff. It is great for adding a little zip to almost anything…I especially love it on home-grown tomatoes in the summer. Yum 🙂

    p.s. Maybe some other readers may know this, but do you ever eat eggs? Or are you just not a big egg person? I was just curious.

    I follow a vegan raw foods diet and believe in it 100%. I appreciate it’s not for everyone, but regardless of your eating philosophy everyone would benefit from adding more whole, raw foods to their diet. And green smoothies are amazing!

    hmm…so question to everyone right now, i’m A REALLY, REALLY poor college student right now, (haven’t found a job yet) so i eat a lot of bread, pb, bananas, lentils, pasta, lettuce, cereal, RICE AND BEANS, a little yogurt, some more apples and vegtables, this basically constitutes my diet for the entire past month…..anyone have another good idea? basically under a dollar, yeah it’s that bad, i’m not ashamed, it gives me character, hahhaha.

    I like eggs, but not for breakfast. I’m not a fan of savory breakfasts but prefer grains, oats, cereal – sweet things 🙂 But I do love eggs in frittatas and omelets for dinner. Funny you should ask because I was going to make an omelet for dinner last night but then we had all that egg stuff in class that I decided to switch it around.

    Another Trader Joe’s bar, yay!
    I tried the Cran Lemon Zest one today.
    I liked it a lottt.
    It’s much better than the lemon LARABAR.
    No offense to LARABAR, I love pretty much every other flavor of theirs.

    Today, I’m going to try your wheatberries.
    I’m pretty excited, lol.
    I’ll let you know how that works out.

    And one last thing, why Smart Balance?
    I’ve wondered about all those butter subsitutes.
    I tried Promise but them realized it had palm oil, which I know isn’t “good” fat.
    I use Land O Lakes with canola oil.
    It’s very yummy. I’d recommend it.

    babycakes, is eating raw vegan difficult at restaurants and when eating at someone elses home? I don’t eat red meat and even that has caused me to be picky at peoples homes for meals

    To you and Kath a question re green smoothies-
    do you think blending up greens-kale,spinach whatever means our body gets more from nutrients(does less of it leave/pass through our body this way?)Thanks so much…

    I love al fresco and it’s much better than Apple Gate or Trader Joe’s. They are sold in most supermarkets I think because my sister buys them on the West Coast at Fred Mejer and I buy them at Publix in Florida. There is a Sweet Apple that is to die for you HAVE to try it!!!! Great stuff
