Signing Off Sunday

Not too much exciting going on around here – except the Boca Haiku Contest judging!!

We made a Mystery Frittata for dinner. I always forget:

1) How easy frittatas are as one-dish meals.

2) How much you get for not too many calories!

This one was great!

I had a small spinach salad with toasted almonds and woodstock dressing too –

I had a handful of peanuts as a snack around 4:30 –

We’re wrapping the weekend up, and I’m going to read in bed. Can’t wait to watch some gymnastics too!!! Like many people, they are my very favorite Olympic event!

    I love frittatas…they are my favorite way to clean out the fridge when I have lots of odds and ends sitting around.

    YESSSS these girls are amazing! they are like little balls of pure muscle and glitterly eye shadow! love it!!

    that picture of the cheese looks like a little marshmellow PUFF. i want to inhale it off the screen!

    ok, when you are getting a wiener dog? i want you to get one nowwwwwwwwwwww!

    Love frittatas. They are so easy and really great way to fill you up!

    Watching the gymnasts myself. Did you see the Chinese girls? I’m convinced their robots. Amazing moves. Have a great night!

    I also love frittatas! Besides being easy, I feel like you can throw most anything in the pan, and it will still turn out great.

    And after seeing another slice of your delicious watermelon, I am definitely going to buy some this week. Hopefully it’s as good as yours looks!

    Those gymnasts are crazy. I’ve been watching all night. I’m Olympics obsessed, and I agree frittatas are such a great way to use up leftovers.

    I miss frittata’s!! I was really impressed by the german lady in her 40’s competing in the gymnastics…truly inspring…and I am a big swimming fan so I am so happy about the 4 by 100M relay!

    Fritatta! What a great idea! Haven’t made one is ages. Well omelette doesnt count does it?
    I also dig gymnastics, having tried it myself when I was a kid (until I broke an arm…) I can’t believe those moves! And those muscles! Beautiful! d

    gymnastics is my favorite but i missed out last night because my husband wanted to watch a movie instead…i spent a lot of time (probably too much!) watching the sports on saturday and even yesterday though so that makes up for it, plus the gymnastics was just a preliminary round right?

    I’m loving the swimming.
    Phelps looks like he’s about to tear up during both of his anthoms.
    It is such a beautiful thing.

    Frittatas are one of my favorite go to meals when I need a quick & easy. They are so versatile – plus a pretty inexpensive way to feed a family.

    I LOVE frittattas!

    I also LOVE the rectangle plate, they seem so much more elegant than round ones. I have to put them on my want list. 🙂

    Good idea with the frittata! I’ve never made one, but we have a ton of random stuff in the fridge I could throw in. Looks yummy!

    Hi Kath!
    I have been reading your blog for months and just wanted to tell you I think its great! It has inspired me to start my own. I love to eat healthy foods, but never have had much motivation to cook them! I always try to bake healthy snacks and desserts but now I’m moving on to cooking! You have so many recipes I definately plan on trying!

    Probably not for a while. Honestly, I’m just not a dog person! And the hub is allergic to cats. And we can’t really afford pets right now, but maybe in a year or so I’ll give in.
