I’ve been on superdrive since Tuesday. With our house guests, my class, work, working out, straightening up, etc., I’ve barely had a minute to sit and relax! And unfortunately we have a packed weekend until Saturday night with more house guests and homecoming activities! Whew! I’m hoping that Sunday will be a real day of rest. I’ve also barely spent ANY time with my husband in the past 48 hours. He got up to make me coffee this morning so we did get a few minutes to watch “Good Eats” (our favorite Food Network show by Alton Brown).
So hence the late breakfast post and the crappy photography. My breakfast photos are never good because I’m always in a rush to eat!
Got up at 4:50 this morning to find a dead roach in the powder bath. Terminix came yesterday – I guess it worked!
Had a small slice of husband’s homemade bread (.6 oz) and 7 grams of Trader Joe’s Peanut Butter (which I still hate!!)
Workout was great this morning. Hard 60-minute spinning class. My heart rate was going nuts – it hit 170-180 a few times, which usually only happens if I’m giving it 100% full out sprint effort, so I think I was picking up the wacked out guy beside me’s signal. But I did work hard myself, so I’m guessing about 450 calories total, which is usually what I burn at that level of work. Those of you who haven’t tried spinning classes – try one! They’re so fun if you find an instructor that you like, and it’s a GREAT workout.
I needed a big breakfast today because I’m not having lunch until 1pm and I spent all of spinning debating what to have!! I settled on 2 Kashi waffles (blueberry), a cup of coffee, and a smoothie. Note to self: my blender does NOT like frozen mango!! The smoothie turned out really thick and frozen (I like it thick yet liquidy) so I had to wait for it to melt some. I can put the blueberries in straight from the freezer, but I think the mango should have been defrosted in the microwave for a minute first. But once they melted, it was very yummy!!

- 1 c frozen mango
- 1/2 c frozen blueberries
- 4 oz plain yogurt
- 6 oz skim milk
- 1 tbsp ground flax
TIP for smoothies: They are WAY more fun and appealing to drink if you have a straw (which I put in after I took the photo). I swipe straws from restaurants/dining halls (!!) and use them for iced coffee and smoothies. It just makes it easier to drink and suck up the thick liquid!

I’m wearing jeans today at work and my favorite J Crew buttondown. Good outfits sure do improve the mood!
Going out to lunch AND dinner today. Lunch at a sandwich shop (still undecided on which one to get). They have a apple, brie and walnut sandwich, but I know with dinner out and a big weekend I should stick to the hummus and veggie. Maybe I’ll settle for something inbetween.

YUM that breakfast looks good! Re: the Diva Pancakes. I looked at your recipe and I looked at the "official" recipe that's now in the CK recipe base…and it seemed like CK's was basically the same as yours but bigger. So, naturally, I picked the bigger recipe ;). I used 1/2 cup McCann's oats, substituted the 1/2 cup egg beaters for egg whites (that came to 3), 1/4 teaspoon each of salt and baking soda, then I added 1/2 teaspoon each of cinnamon and vanilla extract, then I took 1.5 ounces of frozen blueberries, put them in the microwave for 10 seconds, and added them right into the batter (I also tried adding them to the pan but they burned/fell out of the pancake so I wouldn't recommend that method). It was delicious, giant, and I topped it with 1 Tbs. of maple syrup. SO good. Oh, and I added some Splenda to the batter as well because I have the world's biggest sweet tooth, but I know some people are anti-Splenda whenever possible, but it'd work without it I'm sure.
I made the batter at the time of cooking. I also thought you had to leave it overnight, but after reading through some old pancake posts I realized that some people mix the dry ingredients the night before just to save time in the morning, and not for any technical reason.
Interesting, I always make mine the night before because I thought the old fashioned oats had to "soften".
Hey Kath, did you put anything on the waffles? I like to use no sugar added applesauce and sugar free jams.
