Back to my roots – three meals!!
Breakfast // Overnight oats with milk, yogurt, chia, banana, and peanut butter.
And coffee. (Always one cup of coffee first!)
Lunch // Turkey wrap with cream cheese, pickle, greens, and jalapenos with half a green juice.
Snack // Wegmans trail mix!
The kind with M&M lookalikes. Because, duh!
Dinner // Panko salmon with brown basmati and cream cheese garlic zucchini
I learned this panko trick from Blue Apron eons ago: dust with salt and pepper, smooth on a thin layer of Dijon mustard, pat on panko (this was Pecan Panko from WF), and bake for 18 minutes at 375 degrees. Perfection!
What did you eat today?

Among all the meal subscription Services you’ve tried, is blue apron your favorite?
Of the meal kits, yes
I’m going to try that panko trick with tofu!
I love this post, Kath! Such awesome meals, and I love that your trail mix contained M&M-style chocolates.;) We need to make panko-breaded fish soon – that meal looks perfect!

I recorded my meals today! A smoothie, a pumpkin seed bar (homemade), sunflower butter rice cake, cottage cheese bowl, super bowl leftovers (not quite as unhealthy as it sounds), samoa brownie!
My lovely husband made us red Thai shrimp curry with cauliflower rice for dinner while I was at the gym. Unfortunately it was a little burned (smokey barbecue curry could be a thing?!) as he’s easily distracted 😀 but I really shouldn’t complain!
Oh that sounds amazing!!
That salmon!! Yum!!
That salmon sounds great! Dijon mustard makes everything delicious 🙂
Pickles AND pickled jalapeños!
love that panko tip, will try on other fish.
Hi Kath! I saw you had panko salmon on your latest post too 🙂 Small question: Do you coat it in egg before adding panko, or is the mustard enough for the breadcrumbs to stick? Thank you!!?
Just mustard so the Panko sticks! Because you break it you don’t have to worry so much about it falling off.
