Didn’t know what to make for breakfast….last night! Yes, some of the most fun breakfasts involve a little preplanning. Especially if they involve chia seeds.

Last night I mixed up 1/3 cup oats, 1/2 cup milk, and 2 tbsp chia seeds to set.

Note how they firmed up like gel. The best way to describe chia seeds is "fluffy." Seriously. They are like balls of fluff in your mouth. And very nutritious! And don’t have to be ground to absorb their goodness!

I didn’t know what I wanted to do with this chia pudding. Then suddenly I remembered how I want to be like Angela. And she makes gorgeous overflowing banana soft serve parfaits!

After 4 minutes of whirling –

I layered in this order:

  • Overnight oats
  • Soft serve
  • Blueberries
  • Overnight oats
  • Soft serve
  • Blueberries
  • Maple Walnut Granola

Totally delicious and super duper filling!! Sadly I did not make enough banana soft serve to make my glass overflow like Angela 🙁 But I did love the hidden "ice cream" in there.

I also decided I don’t really care for parfaits in wine glasses. While they are beautiful to photograph, eating isnt’ as fun. And my tongue doesn’t fit in there to lick the bottom!!!

I dined on Karen’s porch in her green rocking chair. It was too cold to eat in the air conditioning! No distractions, just nature. So pleasant.

    I know they’re nutritious, but for some reason the texture of chia seeds always freaks me out. I think I’m gradually getting used to them via nut butter.

    I hope it’s ok that I mention this, but I would HIGHLY suggest buying chia seeds in bulk from Whole Foods or Sprouts. Whole foods has them for $5.99 a pound, and I’ve seen Sprouts grocery stores selling them for $3.99 a pound. It’s far cheaper that way and if you bring your own container, no packaging waste. Double win 🙂

    I had the exact same breakfast! Except I just mashed up a banana instead of banana soft serve! I’m definitely giving banana soft serve a try ASAP!

    I have yet to try chia. Or banana soft serve in my oats.

    I love to eat stuff out of wine glasses! Or martini glasses! Or Irish coffee glasses! Though, I don’t lick the bottom, so I guess I don’t have to worry about that. 😉

    I love your green rocking chair! And maybe chia seeds are what’s missing from my OO – unfortunately I don’t think I’d be able to afford them, so would yogurt do the trick, too?

    The parfait is pretty, but I agree, not very fun to eat! I love Angela and all her blogs though, so it’s ok. =)

    I just wish I could digest chia seeds (or flax seeds for that matter), but both totally kill me.

    parfaits in wine glasses are so beautiful, but i agree – not as fun to eat – especially since you have to be so careful not to be so violent with spoon (i like to attack my breakfast)

    I love playing around with flavors for banana soft serve!! I tried peanut butter chocolate, a blob of PB and a few teaspoons of cocoa powder, and a drizzle of agave. YUM!! Also throwing in a handful of mixed berries & coconut is yummy. I’m jealous of your breakfast!!

    Your parfait looks amazing! What brand of oatmeal do you use for your overnight oatmeal? Mine always comes out liek overcooked tapioca pudding. And i have tried different measurements. Currently, i am using an organic irish oatmeal… Any suggestions?

    That parfait looks absolutely delicious! I’ve read about this banana soft-serve twice now and I think that means I have to try it now, haha. I did something similar on accident actually when I made my smoothie yesterday. The frozen fruit must not have broken down well so instead of a smoothie consistency it was like frozen yogurt. No complaints here! lol

    OMG!!!! Its been awhile since I’ve had overnight oats!!! Love the addition of the extra chia seeds, I must try that! The display was beautiful too but so disappointing you couldn’t lick out the remains from the bottom 🙁

    About the wine glasses: I’ve been thoroughly indoctrinated into the philosophy that wine glasses are for wine only. I would get a thorough scolding if my favorite wine expert caught me putting breakfast into a wine glass! 😉

    Is that flower an orange hydrangea (I have no idea how to spell that)? It is gorgeous!

    Just got back from vacation and found my first jar of Nutzo! Can’t wait to break it open. I’ve gone from 139 to 121 in the last year and have not had my nut butters during my losing phase. I plan to add them back in soon and am so excited!

    I agree about the wine glass thing, thats why I mini parfait trifle bowl looking glasses at Walmart for only $1 each! They are great for serving some fun parfaits or ice cream to family members.

    Wow I underestimated the possibilites with chia seeds. I use them in water when biking for hydration….this looks more like dessert than breakfast….fab!

    This is the first recipe of yours I’ve tried – YUM. I was skeptical about the overnight oats (am very sqeamish about milky things) but they were great – will definitely be trying more breakfasts! I have a lot of weight to lose, but want to do it the slow and healthy way – diets always provoke that deprivation cycle/rebound into really horrible foods. Your website is very inspiring to me – thanks for taking the time to post everything!
