Peace Of Mind

I’ve got a lot on my mind right now and didn’t sleep all that well. I was wide awake at 6:30.

this !

I managed to sort through my thoughts and found a craving for french toast deep in there!

On Great Harvest Apple Walnut Bread!

1 egg + cinnamon + vanilla + 1 tbsp milk

+ bread soaked for 2 minutes per side

+ coconut

+ a hot skillet

This was the best french toast I’ve made in ages and I think it was because the skillet was nice and hot when I plopped it on. It got crispy on the outside but was still chewy-dough-wet on the inside. So delish!

Topped with banana, coconut and Barney Butter

Can’t get over my jasmine bloom everytime I go out there!

One of the most calming activities for me is cleaning. I’m going to tackle the floors and laundry. Then perhaps head to the gym in a while for a swim.

    Yum, I think french toast is a comfort food. For some reason cleaning is really soothing for me too. I think it is because then I feel like everything is where it belongs even if my life is totally scattered.

    Ugh…I hate bad nights of sleep!! The good news is that you’ll probably wake up super refreshed tomorrow. And I’ll bet staying active with cleaning and a swim will waken you right up too. 😀

    I hope you have a relaxing day. I know you are keeping busy to get through a lot mentally, I do the same thing. It is very therapeutic! I am sure your house will sparkle after today!     I love how the bananas are sprawled all across the plate – it looks so… relaxed, somehow! Which is funny, given that you were feeling a bit anxious. Hope the cleaning helps, and you feel more at peace soon!

    Cleaning helps calm me, too. I had an interview yesterday, but it wasn’t until 3:30 pm. I was starting to drive myself crazy with anticipation, so I did some cleaning to get rid of nervous energy – did the trick! (I would have worked out, too, but it was a rest day.)

    That Apple Walnut bread looks dangerous! (As in, I’d have trouble not eating the whole loaf.) 😉

    I hope your day gets better and I’m sorry for your loss.

    Your breakfast looks like it would help improve anyone’s mood though! And I can relate to cleaning having a relaxing effect on me. 😉

    Looks like a delicious breakfast.
    Do you keep a journal? Other than your blog? 😉 That helps me to calm my mind and sort out my thoughts, but cleaning might do the same thing for you!

    …and candles? They often help calm me. I used to go to a local cathedral (St. Paul’s) after my Grandmother passed away back in the days when I lived in London- I found great peace there, although I am an atheist through and through.. Your jasmine looks lovely, as does the rest of your garden- you obviously have green fingers! Silly question but do you get bluebells in the U.S.? Have peaceful day with people who really appreciate you 🙂

    I don’t know how you count your laps, but I have to keep my numbers in my head the entire time to keep track so swimming helps me to meditate more than any other activity I’ve found. Hope it helps you get some piece of mind!

    mmmm french toast was one of the first things i made when i was in JHS and we had home ec class (do they still have those anywhere?!) of course, they used wonder bread back then….does THAT stuff even exist anymore?!

    I’m another person that finds cleaning to be calming. A house that sparkles makes everything else seem less chaotic for sure. Enjoy your day fueled by that yummy French toast!

    I find that swimming always helps me clear my head. Something about the repetitive motion – it’s just me and the water, no distractions. Anyway, hope it does the same for you today!

    ah, i noticed the new fotns IMMediately- i like! it’s different.
    that french toast looks to die forr. i never thought of topping french toast with anything but maple syrup or perhaps whipped cream/yogurt. never thought of peanut butter! (or barney butter, for that matter)
    i do like applesauce or jam/jelly on waffles. yuuuum!
