I’m SO with you with the clothing thing! Me too I had to sort through it all before moving and it’s always the worst! You never know when you’ll need that shirt (that you never wore and probably never will) but YOU KNOW! 🙂 Good luck!

On a (weird) sidenote– I was watching a youtube clip of the California Dreams reunion (!!!!!!!!) on Jimmy Fallon, and I’m not sure if you watched that show growing up (I was obsessed with it…along with my Nickelodeon faves), but the guy who played Matt on the show now looks like YOUR Matt in real life! Y’all need to check it out, ha!

Not sure how much of those clothes are going into the Pod, but whatever doesn’t has a very easy packing solution- buy some BIG garbage bags, poke a hole in the bottom and use like a drycleaning bag. Keep like items together and then just label with a quick tag or post it!

Wow, amazing pancakes! Matt gets a lot of credit; I barely have the patience to make one serving of plain pancakes–much less make two servings with 4 different kinds! And that’s a great attitude to have about the house! Sadly, I am not moving and my house is in shambles as well because for some reason I didn’t clean very much this weekend and I have to go get a jump on that now…

I just make up one batch of Great Harvest pancake mix (makes 8 cakes), and then as I plop each cake on the griddle I top it with fun stuff. Then you flip and it all gets mixed in nicely.

We made a big batch of pancakes last weekend and threw some in the freezer to enjoy throughout the week — just had one with homemade blueberry sauce 🙂

For a great homemade “real food” pancake mix, check out the Quick Mix recipe in Francis Moore Lappe’s book/cookbook, “Diet for a Small Planet.” It works for pancakes, waffles, and even coffeecake. We mix up a big batch to have on hand for breakfasts — fast, delicious, healthy, and more affordable than buying premixed. I play around and substitute ground flax, almond meal, corn meal, and other flours to add variety to the Quick Mix.

Good luck with the moving! Your house is actually in a pretty good state – it is not that messy considering you are packing. As for the boxes(yes I know, boxes are absolutely everywhere) – try to write down which is in each of them, it will be much easier. Oh, and the pancakes look so tasty, it is making me hungry.
